I sure wish you all were here to eat the Roast Beef...I have some left and it's going to be sad to throw it out (Duh...maybe I'll take it to the office tomorrow! - Somebody will take it home) We just haven't had a chance to use leftovers as we've been out the last couple of nights. I took my gals out from the office tonight after work to that little English Pub I was telling you all about a couple weeks ago where I had the curried lamb. Food was good! We all made a pact that we weren't going to exchange gifts this year as nobody has much money. Well, yesterday we decided we would re-gift! Wrap up things we have in our homes and just pick a gift! it was hysterical and actually everybody got something they liked! I think I received a frame from the stuff I brought into the office when I cleaned out my last house! I like it though.
Marianne: I'm definitely the person to give medical advice because I don't go...but just take it easy. I'm just getting ready and have so much to do and there's just been no time. I promised myself I would have everything done a day in advance and it's just not working out. Oh well, I do work better under pressure. I sure hope you have the best trip! Hi all!! I'm one of the ones not recovered yet!!! I'm with woofie!!! LOL!!! NOT!!! I'll hit it tomorrow but it has been nice gellin!!!! I had not even turned the TV on. It has been...wait for it..QUIET!!!
I turned on the TV this AM and the 1st thing I heard was 8 Americans were dead in a bus crash in Egypt so I turned into my mom who freaked over everything and contacted Marianne. She was safe in Fla. still, TG and wasn't even sure with the snow in NY if she was gonna be able to leave. But things worked out and they were leaving Dulles at 5:00PM.

It is beautiful but I quickly had enough of it. We should have left for home on Sunday but the roads where Iced up and I have only once driven on ice roads and as the nuts up there drive even worse than they do here it would not have been good.
Sounds like everybody had a good Christmas! That was a little scary reading about the American travelers in Egypt! So glad to hear Marianne is safe and well!

Don and I went to Mexican cooking school today. Or should I rephrase that and say I dragged Don to Mexican cooking school!
Amazingly enough, I think he really enjoyed it. The classes are limited to 12 people. It's about a 10 minute ride from our resort and is located in this very sweet little town of Puerto Morelos in the owners home! From the minute you enter, it is so very welcoming. The instructor was a sweetheart and an ex restaurant owner from Mexico city and Vancouver Canada . The school founder is this bubbly gal from Australia. Weird combo but works well. We learned a lot, and I think every dish had some kind of chili pepper in it! We learned how to make a variety of Salsas, including one made with 16 habenero peppers that I think made my ears weep! It hurt so good though!
The main dish was chicken mole. It was amazing to see how much they used the mortar and pestle as well as cook in ceramic pots! We tested so many spices, peppers and I bought a couple of really nice blends. This was authentic quisine from this area and it was wonderful. Definitely not Taco Bell! Pablo really knew his food and gave such a wonderful history dating back to inca/Aztec

I have my iPad and have been checking weather! What the heck is going on? I'm really not looking forward to seeing my injured plants when I get back. People are complaining here also as it's chilly. The resort is pretty quiet also as I think there have been a lot of cancelled or delayed flights! I'm loving it though!
The strange thing is that the expected low up where my Canadian office is located in Canada is only supposed to be a couple degrees different than Port Charlotte tonight! That's nuts!
