RECIPES FOR A HEALTHIER ME forum: Chicken Breast with Speghetti Squash

|this is a great, easy and i believe, healthy recipe
4 boneless, skinless chicken breast
2 small cans of mushrooms, drained
1 speghetti squash
half of a 28 oz, can of crushed tomatoes
1/2 cup chicken stock
salt and pepper to taste
The night before, place the squash into a baking dish and set it in the oven at 350 degrees. cook until it turns a light color brown and you can pierce the skin with a sharp knife. remove and let cool then cut it in half and remove the seeds and then remove the "speghetti". place into a bowl and cover with plastic wrap and refrigerate over night.
Pour the stock into the bottom of the slow cooker. add the four breasts (i put them sideways into the pot) then add the two cans of mushrooms. cook on low for 5 hours. after three hours remove the chicken breasts and put the speghetti into the bottom of the cooker and mix it with the chicken stock. place the breasts back into the cooker and pour the crushed tomatoes over it. continue cooking for 2 more hours. Total cookikng time is 5 hours.
