|When I cook I like to make at least half again as much so DH can have it for lunch. (saves a sandwich fixings).
Then, when I start with a 'big dinner with a roast or chicken...I 'preplan' how I am going to use 'tonights' to make more meals before I choose the way to cook it. We are only 2 so it isn't that hard. If I think I can use the port roast to have "repeat the original", hot roast pork sanwiches, then add mexican spices for tacos the next night....I don't cook the roast with Asian Spices. But if I used Asian spices, I can use left over in stir fry, sandwiches and cold in a salad. This does save money and saves time spent in the kitchen using appliances that cost money. We stretch it out as far as we can....and have fun doing it!!!!
