Who hasn't enjoyed Stuffed Bell Peppers?

Bell peppers for some have been a comfort food. But my friend Moby (Mary) gave me an idea how to kick it up a notch.

Is this the way the stuffed bell peppers you have eaten look like?     Dave and Moby smoke their bell peppers.  We decided it was time to try it.  We used this recipe for the stuffing: CLICK HERE Spanish Tomato Rice   We fried a pound of bacon just enough for it to shrink a bit but was still flexible;  Made the filling and cooled it.  After stuffing the peppers we wrapped strips of bacon around the outside of the peppers and secured with toothpicks. The smoker was prepared and we chose to use Mesquite wood chips that had been soaked in water for half an hour.   We left the peppers in the smoker around 2  1/2 hours.   The finished product was marvelous; however, the smoke was a little heavy for us; next time we'll use fewer wood chips.
