The Dressing Recipe

This recipe called for 2 T sugar. Taste the dressing before adding to the salad. You may wish to add even more sugar to balance out the flavors.

This is Tanya's favorite and she changes out the mayo using 1/2 cup lowfat plus 1/2 cup nonfat.

List of Ingredients
3 Chicken Breasts
1 whole green onion
1 slice ginger root
1 T sherry
1/2 tsp salt
1/2 tsp sugar
2 cups water

3 cups finely shredded lettuce
2 green onions, shredded
1/2 pkg won ton skins
cut into strips and deep fried


Spicy Soy Dressing:

3 T vinegar
2 T sugar
1 T light soy sauce
1/2 tsp ginger powder
1 clove garlic, finely minced
1/2 tsp sesame seed oil
1/2 tsp cayenne pepper
1 cup mayonnaise

Preparation
1. Place chicken breasts in a 2 qt. saucepan with onion, ginger root, sherry, salt, sugar & water. Bring to a boil, cover and turn off heat. Steep 25 minutes
2. When chicken is cool enough to handle, remove and discard skin & bones. Shred meat into long strips. (chicken has a better texture if shredded by hand)
3. Combine all ingredients for dressing, mix well and refrigerate.
4. To serve: mound lettuce & green onions in salad bowl. Arrange chicken over lettuce. Add deep fried won ton strips. Add about half of dressing and toss. Refrigerate any left-over dressing.
