Recipe Title: Veal or Chicken Picata

When our youngest daughter graduated from college she chose to have a sit down dinner around our pool for family and friends. She requested Chicken Piccata. For months before the event, I experimented for the perfect recipe. I would have her do the taste testing and this is the recipe we wrote for her celebration.

Lemon Pasta with Asparagus

List of Ingredients
4 whole skinless chicken breasts, deboned OR 1 1/2 - 2 lb. veal scallopini or cutlets
1/2 - 1 cup flour, mixed with salt, pepper, & paprika

6 T butter plus 2 T olive oil

1/2 cup onion, diced

2 garlic cloves, minced

1 1/2 lb. sliced mushrooms

2 T lemon juice
3/4 cup dry white wine

Noodles or home made pasta

3 T capers

Preparation
Pound the chicken breasts to 1/4" thickness or less
(Alternatively, you may substitute veal scallopini which needs no pounding as it is cut very thin)

Dredge in flour mixture.

Heat butter and olive oil in a frying pan

Saute the onion until translucent; remove from the pan and set aside.

Add chicken or veal and saute until browned. This only takes about 1 minute per side.

Toward the end, add the minced garlic and cook a minute or two.

Remove chicken or veal from the pan to a platter.

Add back the onion and sliced mushrooms. Saute until mushrooms are cooked and liquid is reduced.

Return chicken or veal to the pan and add the lemon juice and white wine. Over a low heat, simmer about 15 minutes to heat through.

Add the capers. If you wish to have the sauce thicker, you may choose to thicken with 1-2 T flour. This will depend on how much moisture is released by the mushrooms.

Serve over pasta and garnish with lemon slices. We served this over "Lemon Pasta with Asparagus".
