Recipe Title: Crostini with Chicken Livers

List of Ingredients
1 lb Chicken Livers
2 cloves Garlic minced
2 teaspoons Capers
3 Anchovies
Olive Oil
¾ cups white dry wine

Preparation

Chop up your Chicken livers into a course dice…

Cut a Loaf of sourdough or other bagette cut into ½ inch slices – about 10 slices

Preheat your broiler at 450 to toast your bagette slices – just keep an eye on them and take them out when they’re toasted. Flip over to get both sides toasted.

Drizzle and heat a large saucepan with olive oil, add the Garlic, anchovies and capers. Cook until the anchovies melt. Add the chopped up chicken livers and sauté on high until lightly browned. (about 10 minutes). Add the wine and cook another 3-4 minutes.

Heat up the Onions for a few seconds

Spoon Liver mixture on top of Toasted bread and top with The Balsamic Onions.

I made Anne Burrells recipe for Carmelized balsamic onions as a topper…

2 large onions sliced
Olive oil
¾ cup Balsamic vinegar
Salt to taste

Heat the olive oil in a large saucepan…add the Onions and let them sweat for about 15 minutes covered. Keep checking on them and give them the odd stir or shake. Add the Balsamic Vinegar and simmer for about another 10 minutes until the vinegar gets syrupy. Take it off the burner.
