Recipe Title: Mud Pie

The first time we went to Hawaii we stayed on the island of Kaui. There was an ice cream parlor in Koloa called The Ice House. We ordered the Mud Pie and had to recreate it at home.

You can substitute a pre made chocolate cookie pie crust and sprinkle the broken up candy over the bottom of the crust. It doesn't come out quite as well because the candy tends to melt when it comes in contact with the ice cream. The home made cookie crust has a better flavor.

List of Ingredients
One tube of Nabisco Famous Chocolate Ice Box Cookies
1/2 stick melted butter

4 chocolate covered toffee bars, broken up with a rolling pin

1 pint good vanilla ice cream

1 pint good coffee ice cream

1 jar hot fudge ice cream topping

Marachino Cherries and pecans for garnish.

Preparation
Mix melted butter with ground up cookie crumbs & broken up toffee candy; press into a 9" pie pan
Chill thoroughly.
Set our ice creams to slightly soften.
Layer vanilla ice cream in the pan and smooth over.
Layer half of the hot fudge topping.
Layer coffee ice cream and smooth over.
Top with remaining hot fudge topping and garnish with marachino cherries and pecans.

Freeze until ready to serve; if wrapped well this can be frozen for a month ahead of time.

It is very good and so simple to make. The only Mud Pie my family likes better is Red Robin's. That is only because they put peanut butter in theirs.
