|Recipe Title: Tarragon Chicken|

List of Ingredients
|4 boneless, skinless chicken breasts|
1/2 T olive oil
1/4 onion, chopped
2 T flour
1 c chicken stock
1 1/2 T dried tarragon
8 oz plain yogurt (room temperature)
|Heat olive oil in a skillet on Medium and add chicken; cook two minutes on each side until lightly brown. Remove from pan and set aside.|
Add onion to skillet and stir until brown, about 3 minutes.
Stir in flour & cook about 3 minutes; stir in chicken stock; add back chicken plus 3/4 T dried tarragon.
Cover & simmer until tender, about 25 minutes.
5 minutes before chicken is done, stir in the yogurt and remaining 3/4 T dried tarragon.
Heat through but DO NOT BOIL.
Serve chicken over rice or noodles, spooning gravy over.
