Good for you on making your own noodles. When I bother to make pasta by hand, I do a large amount. It freezes well and I figure if I'm going to make a mess in the kitchen, it makes it more worthwhile to make up a large batch. By the time you pull it out of the freezer, you forget how much time you spent making it. It really doesn't take much time but it does when making the amount I choose to make.

The hard part is the moisture. It varies with every batch due to the moisture in the flour and even the humidity in the air. Otherwise it's pretty easy and very therapeutic.
You might want to try the Never Fail Noodles first, as they always come out well.

Thanks TLC. I make my own bread and I have to add 2-4 more tbsps of water here depending on the receipe. I will try the Never Fail receipe first but I want to try the other receipe for canelloni with my own herbs mixed into the pasta mmmmmmmm herby pasta mmmmmmm
