To the French, not just any variety of escargot are esculent. Their palates are truly discerning when it involves the snails they will and will not eat.

Some items in the crisper drawer have been hiding and are not now esculent. I call them science projects, and donate them to the compost pile where other life forms think they are perfectly exculent. To each his own.

I'd have to be really hungry to eat a snail. However, I think that alligator is esculent, if cooked correctly. It tastes, of course, like chicken, but the meat is a bit like rubber.
