| I'd like to start off with one of my favorite of Chris's recipes: Pineapple Sage Pound Cake Recipe The bright red flowers adds that bit of wow to this cake! 1 cup butter, at room temperature 1 cup granulated sugar 1/4 cup honey 5 eggs 2 tablespoons chopped pineapple sage leaves (the small, new leaves are best) 3 tablespoons coarsely chopped pineapple sage flowers, if available 1 teaspoon grated lemons, rind of 4 tablespoons well drained crushed pineapple 1 teaspoon baking powder 2 cups flour Makes 1 loaf or 4 miniature loafs Preheat oven to 325 degrees F. Grease and flour four miniature loaf pans*. Cream the butter and sugar until very light and fluffy. Beat in the honey. Add the eggs one at a time, making sure to beat for one minute after each addition. Beat in the sage leaves, flowers, lemon peel, and crushed pineapple. Stir the dry ingredients together and add to the butter mixture. Fold these together gently, until just blended. Pour into loaf pans. Bake for approximately 45 minutes ( time for 1 loaf), or until golden brown (wooden pick inserted into center will come out clean). |

| Here's one of Chris's Chicken recipes: I have a Sesame Chicken recipe that is easy, I make it quite often . 4 chicken breasts, I alway have a bag of the frozen ones on hand, slice into strips. Dredge the chicken in 1/4 cup flour with 1/4 teaspoon salt and 1/8 teaspoon pepper. set aside. Mix together 1/4 cup soy sauce, and 1/4 cup sugar. 2 tablespoons of toasted sesame seeds. 1/2 teaspoon of dark sesame oil. And veggies of your choice. Brown the chicken in pan, you can use Pam or a small amount of cooking oil. When brown reduce heat, add the soy sauce and sugar mix. stir until sugar dissolves. (you can remove the chicken from the pan to do this but I just push it aside) Add the veggies of choice.Stir in the sesame oil and seeds. I like Jasmine rice with mine. And I have used snow peas, thinly sliced raw carrots, frozen broccoli. Once you get everything assembled the cooking goes fast. |

One of Chris's personal favorites: Moist Chocolate Cake 2 cups all purpose flour 1 teaspoon salt 1 teaspoon baking powder 2 teaspoons baking soda 3/4 cup unsweetened cocoa 2 cups sugar 1 cup vegetable oil 1 cup hot coffee 1 cup milk 2 eggs 1 teaspoon vinilla extract Sift together all dry ingr. in large mixing bowl. Add oil, coffee & milk; mix at medium speed for 2 minutes. Add eggs & vinilla, beat 2 minutes more. Pour into 2 greased & floured 9 inch pans (or two 8 inch & 6 muffin cups) Bake 325º for 25- 30 minutes. (till cake tester comes out clean) Note: this batter is very thin. Icing: 1 cup milk 5 talbespoons all purpose flour 1/2 cup butter-softened 1/2 cup shortening 1 cup sugar 1 teaspoon vinilla Combine milk and flour in sauce pan; cook until thick, I stir with a wisk to get it smooth. Cover and refrigerate. In medium bowl, beat butter, shortening, suger and vinilla until creamy. Add chilled milk/flour mixture and beat for 10 minutes. Frost Cooled cake. |

| Another one from Chris Pecan Pie Bars Preheat over to 350º Combine: 2 cups flour 1/4 cup packed brown sugar 1/2 cup butter (one stick) Cut in butter until mixture is crumbly, press this mixture in to 9 X 13 pan. Bake for 15 mintues. While "crust" is baking Combine: 1 (14oz can) sweeted condensed milk 3 eggs beated 1 1/2 cup chopped pecans 2 tables lemon juice Pour above mixture on crust speading around the pecan pieces Return to over for 25 minutes. Top should be set, remove from oven and cool. cut into bars (16) Store covered at room temp. |

| Chris's latest try at an old favorite Chocolate Chip Cookies Sift together: 3 cups flour 1 teas. baking soda 1 teas. salt Beat together: 1 cup butter crisco ( one stick) 3/4 cup sugar 3/4 cup brown sugar 1 teas. vanilla 2 tables. water 2 eggs Add flour mixture Stir in 1 1/2 to 2 cups Chocolate chips. drop onto an ungreased cookie sheet . Bake at 375• for 8 minutes. Chris said these did not flatten out and did not turn hard and crunchy when they cooled, this is how she likes her CC cookies. |

| Here's one from Chris just in time for fall Hearty Pumpkin Chowder Ingredients 2 tablespoons butter 1 cup onion, diced 1 cup celery, chopped 4 cups pumpkin, peeled and cut in 1 inch chunks 2 tablespoons peeled fresh ginger 2 tablespoons chopped garlic 3 cups chicken broth 1 cup diced peeled potato 1 1/2 cups lima beans, frozen 1 cup corn kernel 1 small red bell pepper, diced 1 cup ham, chunks bite sized 4 cups milk 1/2 cup flour 3/4 teaspoon salt 1/2 teaspoon nutmeg Directions 1 Saute onion, celery, pumpkin, ginger and garlic in butter 5 minutes over medium heat. 2 Stir in broth, potatoes, lima beans, corn and bell pepper. 3 Boil then cover and simmer 15 minutes. 4 Add ham. 5 Whisk milk, flour, salt and nutmeg in a medium bowl. 6 Stir milk mixture into pot and bring to boil. 7 Stir a few minutes until thickened. |

| Another of Chris's recipes Cowboy Beans & Rice Ingredients 1 lb lean ground beef 1/2 cup chopped onion 1 cup long grain white rice, uncooked 3/4 cup water, plus 2 tablespoons water 3/4 teaspoon chili powder 1/2 teaspoon salt 1 (15 ounce) can pinto beans (I used black eye peas) 11 1/2 ounces tomato juice 1 (4 ounce) can chopped green chilies (undrained) Directions 1 Cook meat and onions in skillet, stirring to brown and crumble meat, drain off any grease. 2 Combine meat mixture, rice water, chili powder, salt, beans, tomato juice & chili peppers; stir well. 3 Pour in to a 3-quart casserole dish,. 4 Cover and bake at 350°F for 50 minutes. 5 Stir and cover and bake again for and additional 30 minutes, or until rice is tender. Don't forget the cornbread! |

| One of Chris's pies Sour Cream Apple Pie INGREDIENTS Crust 1 Pillsbury® refrigerated pie crust (from 15-oz box), softened as directed on box ( I did my own Crust) Filling 1 1/4 cups sour cream 3/4 cup granulated sugar 1/4 cup all-purpose flour 1/4 teaspoon salt 2 teaspoons vanilla 1 egg 6 cups 1/4-inch slices peeled baking apples Topping 1/2 cup all-purpose flour 1/2 cup chopped walnuts 1/4 cup granulated sugar 1/4 cup packed light brown sugar 1/2 teaspoon ground cinnamon Dash salt 3 tablespoons cold butter or margarine DIRECTIONS 1. Heat oven to 400°F. Unroll pie crust in 9-inch glass pie plate as directed on box for One-Crust Filled Pie. In large bowl, beat sour cream, granulated sugar, flour, salt, vanilla and egg with wire whisk until well blended; stir in apples. Pour into crust-lined pie plate. 2. Bake 15 minutes. Reduce oven temperature to 350°F; bake 30 minutes longer. 3. Meanwhile, in medium bowl, mix all topping ingredients except butter. With pastry blender or fork, cut in butter until mixture looks like coarse crumbs; refrigerate until ready to use. 4. Sprinkle topping over pie. Bake 20 to 25 minutes longer or until topping is golden brown. Cool completely on cooling rack, about 2 hours. Cover and refrigerate any remaining pie. |

| Another of Chris's pie recipes. Oatmeal Pecan Pie Ingredients 1 unbaked pie crust 1/2 cup butter 2/3 cup sugar 2/3 cup dark corn syrup 2/3 cup regular rolled oat 2 eggs, beaten 1 teaspoon vanilla 1/2 cup chopped pecans whipped cream (optional) Directions 1.preheat oven to 325. 2.in a medium pan melt butter. 3.remove from heat, stir in sugar, corn syrup, and oats. 4.stir in eggs and vanilla. 5.pour into unbaked pie crust. 6.top with pecans. 7.cover edges of pie with tin foil to prevent overbrowning. 8.bake for 25 minutes. 9.remove foil, bake for an additional 20-25 minutes until set. 10.cool on a wire rack. |

| A "pickled" recipe from Chris Here is a good one for using up some green tomatoes. It only makes 4 pints. Piccalilli Ingredients 5 green tomatoes 5 green peppers 2 red peppers 5 onions, peeled 1 small cabbage 1/4 cup salt Brine 3 cups brown sugar 1 1/2 teaspoons celery seeds 1 tablespoon mustard seeds 1 tablespoon whole cloves 2 inches cinnamon sticks 1 tablespoon allspice berry 2 cups mild cider vinegar Directions Cup up vegatables, I like to have mine in strips but you can also coarse chop them. Sprinkle them with the 1/4 cup salt. Cover and let stand overnight. Next day. Cover with cold water and drain. Add the remaining Brine ingredients (I tie the spices in cheese cloth so that I can remove the whole spices from the vegatables). Bring to the boiling point and cook slowly 15 minutes. Pack in pint jars. (4 Jars) And process in boiling water bath to seal. |

| This is one of my personal favorites of Chris's recipes Irish Soda Bread 4 cups AP flour ½ cup sugar 4 teaspoons baking powder ¼ teaspoon baking soda ½ teaspoon salt 1 pint sour cream ½ cup buttermilk 2 eggs 2 cups raisins, I mix light & dark together raisins 1.Put dry ingredients in a large bowl. 2.Add raisins and stir to coat. 3.Beat eggs. 4.Add eggs, sour cream and buttermilk. 5.Mix well. 6.Mound on cookie sheet or pizza pan. 7.Mark a cross in the dough. 8.Bake at 350 for 60 – 75 minutes. 9.Test for doneness starting at 45 minutes with a cake tester. 10.(Can halve recipe and make one smaller loaf). |

| Here's another great cake recipe from Chris White Peach Pound Cake Ingredients 1 cup butter, softened (no substitutes) 2 cups sugar 6 eggs 1 teaspoon almond extract 1 teaspoon vanilla extract 3 cups all-purpose flour 1/4 teaspoon baking soda 1/4 teaspoon salt 1/2 cup sour cream 2 cups diced fresh white peaches, don't peal confectioners' sugar Directions In a large mixing bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extracts. Combine the flour, baking soda and salt; add to the batter alternately with sour cream. Fold in the peaches. Pour into a greased and floured 10-inch fluted tube pan. Bake at 350 for 60-70 minutes or until a toothpick inserted near the center comes out clean. Cool for 15 minutes before removing from pan to a wire rack to cool completely. Dust with confectioner's sugar if desired. |

| Here's an interesting cookie recipe that Chris shared a while back. Cardamom Butter Star Cookies 3 cups sifted flour 1 teaspoon baking powder 1/2 teaspoon salt 1 teaspoon Ground Cardamom 1/2 teaspoon Cinnamon 1/4 teaspoon Ground Allspice 1 cup (2 sticks) butter, softened 1 1/4 cups sugar 2 eggs 1 teaspoon Vanilla Extract 1. Sift together flour, baking soda, salt and spices; set aside. 2. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Beat in eggs and vanilla. Gradually stir in flour mixture until well mixed. Refrigerate dough 1 hour. 3. Preheat oven to 350°F. Roll dough on lightly floured surface. Cut into shapes with cookie cutters. Place on ungreased baking sheets. 4. Bake 10 to 12 minutes or until lightly browned. Cool on baking sheets 1 minute. Remove to wire racks; cool completely |

| This is one of my favorites of Chris's cookie recipes. Coconut Washboards 2 cups flour 3/4 teaspoon baking powder 1/4 teaspoon cinnamon 1/4 teaspoon nutmeg 1/8 teaspoon salt 3/4 cup butter 1 cup brown sugar, firmly packed 1 egg 1 teaspoon vanilla 1/2 teaspoon almond extract 1 1/3 cup flaked coconut Mix dry ingredients (first 5) together set aside. Cream butter and sugar together, till fluffy. Add egg,vanilla and almond extract. mix well. Start adding the dry ingredients, a little at a time mixing well. Add coconut to mixture. Divide dough into 2 parts, Chill if necessary if hard to handle. Roll or pat into a 10 X 9 rectangle. Cut each rectangle into 4 strips, lengthwise. Cut each strip into 10 pieces. Place each piece about 2 inches apart on an ungreased cookie sheet press each cookies lightly with a floured fork. Bake in preheated oven at 375º for 8 to 10 minute, until golden brown. |

| These cookies looked really pretty. I remember Chris saying that the chocolate star candies are sometimes hard to find. Chocolate Star Cookies Yield 50-60 cookies 1 cup Crisco 1 cup sugar 1/2 cup brown sugar 2 large eggs 2 tablespoons water 1 teaspoon vanilla 3 cups flour 1 teaspoon baking soda 1/2 teaspoon salt 1 box Brach chocolate stars Preheat oven to 375° . In a large mixing bowl, beat together Crisco, sugar, brown sugar, eggs, water and vanilla until well mixed. Add the flour, baking soda & salt to the mixing bowl and mix well. Cover and refrigerate dough for 30 minutes. Roll dough into 1-inch balls and place on ungreased cookie sheet. Place in preheated oven and bake for 9-11 minutes or until light brown. As soon as you remove the cookies from the oven, place a chocolate star on the top of each cookie A friend suggested that if the candies were not available, to melt some chocolate chips and pour them into a pastry bag fitted with a star tip and then squeeze a star onto each cookie. |

| I remember Chris saying these cookies were a big hit with her co-workers. They are very unusual and sound scrumptious. Trilby Cookies 1c. shortening 1c. Butter, melted 3c. brown sugar 1c. buttermilk 1t. vanilla 2t. soda 1t. salt Cream together the above Add 6c. flour 4c. oatmeal mix all together and chill dough several hours. Then drop onto ungreased cookie sheet. Bake at 375ºfor 12 minutes. (Thin Icing) 2T milk 1T peanut butter 1c. powdered sugar Stir, mixing till smooth, drizzle over warm cookies |

| Chris had said that this was always a favorite when she had overnight company. Overnight Coffee Cake Ingredients 3/4 cup soft butter 1 cup sugar 2 eggs 1 cup sour cream 2 cups flour 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon nutmeg 1/2 teaspoon salt 3/4 cup brown sugar 1/2 cup chopped pecans 1 teaspoon cinnamon Directions 1.Cream butter and add sugar gradually. 2.Beat at medium speed until light and fluffy. 3.Add eggs one at a time and beat. 4.Add sour cream and mix well. 5.Combine flour and next 4 ingredients. 6.Add to creamed mixture and mix well. 7.Pour into greased and floured 13x9 pan. 8.Combine brown sugar, pecans and cinnamon. 9.Sprinkle evenly over batter. 10.Cover and chill 8 hours. 11.Uncover and bake at 350 degrees for 35 to 45 minutes or til wooden pick comes out clean. |
