| Black Walnut Soda Bread 4 Cups of all purpose unbleached flour 1/2 Cup sugar 1/4 teaspoon salt 1 teaspoon baking powder and 1 teaspoon baking soda 2 Cups raisins - dark or light 1 Cup chopped black walnuts 1 Stick melted margarine or butter 4 Whole eggs 1.5 Cups buttermilk Preheat oven to 350 F. With cooking spray, coat heavily a 10-inch round cake pan or an iron skillet In a large mixing bowl, place the flour, sugar, salt, baking powder, soda, raisins, and nuts. Mix all these ingredients together thoroughly. Add in the margarine, eggs and buttermilk. Mix everything together thoroughly. Pour batter into the pan and bake for 45 to 60 minutes. |

| Black Walnut Cookie Bars 1/2 Cup butter or Margerine 1 Cup white sugar or Honey 3 Whole eggs 1.5 Cups all purpose flour 1 teaspoon baking powder 1/2 teaspoon salt 1 cup chopped Black Walnuts 2 teaspoons pure vanilla, divided 1 Cup light brown sugar Additional walnuts for topping Preheat oven to 350 F. Heavily coat one 13-by-9-inch baking pan with cooking spray. . Beat together the butter and white sugar or Honey until fluffy and yellow. Separate 2 of the eggs. Set whites aside Add in the 2 yolks and the remaining 1 whole egg to the batter. Add in half the vanilla. Atir the whole mixture well. Mix the flour, baking powder and salt together in a small bowl. Add the dry ingredients to wet mixture and mix thoroughly. Pour the batter into the baking pan and smooth. Sprinkle chopped nuts over the top. Beat the egg whites until they foam. Add remaining vanilla and brown sugar and beat well until stiff. Spread egg white mixture over the nut layer. Bake 30 minutes and cool. Test doneness by inserting clean knife blade into center. Cool and then cut the cookies into bars & garnish with reserved walnuts. |

Black Walnut Fudge 3 cups chocolate chips 1/2 lb butter 3 tbsp vanilla extract 4 1/2 cups granulated sugar 1 large can evaporated milk (not skim) 1 cup black walnuts pinch of salt Butter for greasing pan In a large mixing bowl, combine chocolate chips, butter and vanilla. Set mixture aside. In a large saucepan, combine sugar, milk and salt. Over medium-high heat, bring mixture to a rolling boil. Boil for 6 minutes, stirring constantly. Remove mixture from heat and pour over ingredients in bowl. Stir with electric mixer until well combined. Stir in 1 cup black walnuts. Pour into greased 9 x13 inch pan. Let cool for at least 2 hours. Cut into squares. |

| Wet Black Walnut Syrup 1 cup white sugar 1 cup of light corn syrup 1 cup of water 1 tsp vanilla extract 2 cups of chopped Black Walnuts Place a large sturdy saucepan over medium heat. Add the sugar, corn syrup and water. Keep stirring this mixture until sugar is completely dissolved. Add the walnuts and let the mix go back to a boil while stirring constantly. Once boiling, continuing stirring for another two minutes. Remove mixture from heat and allow it to cool before attempting use. Store in refrigerator or in cabinet if using sealed sterilized jars. This makes a great topping for ice cream, fresh chilled sliced fruit, pound cake or pancakes. I once made a great simple dessert from this using scoops of ricotta cheese topped with nothing else and it was a great hit! |
