|I grew up in San Antonio. We were more about Mexican Food than seafood. Shortly after we got married, we moved to Beaumont. Living in Southeast Texas I remember the first Crawfish Boil we had. It was a birthday party for my mother, who turned 55 that year. She was still in San Antonio, so we video taped the party and sent it to her. They'd just changed the speed limit to 55 mph on the highway, so we made a big highway sign that said 55. We cooked up about 50 pounds of crawfish, lots of taters and corn and onions. And like you, poured the whole thing onto the table on newspaper. Watching the video afterwards we told Mom to watch it in Fast Forward for a treat. It was hilarious watching us peeling the crawfish and tossing the hulls. We've had many crawfish boils since then and enjoyed every one of them.
As for me though, I like to be the one to add the seasoning. You can always add more, but you can't take it away. I'm not big on hot and spicy. I like the flavor not the pain!
