I love Clam Chowder and this is one variation I make when I'm in a hurry. I like mine a little soupy and not so thick, but if you want a thick chowder, just add more flour and make a thicker roux. ![]() Ingredients 6 Slices of thick lean bacon 1 Large Onion (finely diced) 2 Stalks of Celery (diced) 3 cups of diced Potatoes 1/2 cup of butter 3 tablespoons all purpose flour 3 cups of Clam juice 1 8oz container of heavy cream 1 cup of half and half 4 - 6 1/2 oz cans of minced or chopped clams - drained, with juice retained. Pepper to taste Prepare all of your vegetables and bacon: - Dice the Onions and celery, peel and chop the potatoes and dice the bacon into 1/2 inch pieces. ![]() In a Dutch oven or small stock pot fry the bacon until semi-crisp. Add the onions and celery and saute until transparent. Add the potatoes and cook everything together for about an additional 5 minutes. ![]() Add 2 cups of the clam juice and just let everything simmer. In a small skillet, melt 1/2 of the butter. Add the flour and make a roux. Keep stirring. Add the additional cup of clam juice and keep whisking until smooth with no lumps. Stir this into to the the Vegatable Bacon mixture. Add the retained clam juice from the cans, the heavy cream and the half and half stirring constantly. Stir in the clams and reduce the heat to low and simmer for about 30 minutes. Just before serving, add the other 1/4 cup of butter and Enjoy!!! ![]() Season with pepper and serve... |

| Kat, I love clam chowder and I also look for quick and easy ways to make it. One method I use is to start with frozen potatoes O'Brien. Like hash browns but with onions and sweet peppers chopped into the shredded potatoes. And I would love to make the chowder with all that cream but, alas, I need to stick to milk, 2% at the most. | I've used "fat free half 'n half" to make very good clam chowder & shrimp bisque... substituted for all or part of the cream, it cuts fat but leaves a lot of the richness in. If I use all fat free dairy in the broth, I then splurge and put a splash of heavy cream in the middle of the bowl to swirl around and savor. | With the weather starting to turn chilly it is time to start planning meals that warm me up and clam chowder is a favorite of mine. I have never tried making it myself but this recipe looks easy enough and sounds delicious! Now all I have to do is find clam juice |

| 107, oh I remember the heat and miserable feeling of never being able to feel cool. I am not looking forward to the high heating bills of winter but I am sure glad I don't have to run an AC for months in the summer! |

| My electric bill was much higher running the a/c than the heat this summer. That surprised me, but then again it was an exceptionally hot year. I came across this lower fat version of clam chowder and thought folks might want to try it. It uses broth from the clams so no need to buy any.
