![]() I Love wedge salads and this dressing combined with the warm bacon just makes this one "Outragiously good!" This makes enough for about 4 salads Ingredients 3/4 of a cup of real mayonnaise 2 tablespoons fresh lemon juice 1 1/2 teaspoons of hot sauce 1 teaspoon of coursely ground black pepper 1/2 cup of coursely crumbled blue cheese Buttermilk or heavy cream About 6 slices of thick-cut bacon, cut into 1 inch peices 3/4's of a head of Iceberg lettuce, cut into 4 wedges Red onion slices, sliced thin Mix the mayonnaise, lemon juice, hot sauce and black pepper together. Mix in the Blue Cheese. Mixing well, thin with the buttermilk or heavy cream - adding a tablespoon at a time until you come up with a desired consistency. Cover and chill. (You can make this a day ahead) ![]() Cook the bacon until golden brown and beginning to crisp. Drain on paper towels. Arrange the wedges on separate plates. Spoon the dressing over and distribule the bacon over the salads. Garnish with the red onions. Enjoy! |
