TANGY SIRLOIN STRIPS
Ingredients

2 lb sirloin steak
2 TBSP vegetable oil
1/4 c diced onion
1 small clove garlic minced
1/4 c soy sauce
4 oz can sliced mushrooms
2 beef bouillon cubes
2 1/2 c water
1/2 tsp pepper
4 TBSP cornstarch

Instructions
Cut steak into thin strips about 4" long and brown in oil in large skillet. Add onion and garlic. Simmer 3 min. Add soy sauce, mushrooms, bouillon cubes, 2 c water, and pepper. Simmer about 45 min until meat is very tender. Mix cornstarch in 1/2 c water and add to meat. Simmer until thickened. Serve over rice or noodles.

CHEESY BEEF PATTIES WITH MUSHROOM GRAVY
Ingredients

1 1/4 lb ground beef
1 c breadcrumbs
3/4 c sharp cheddar cheese, grated
2 tsp onion flakes
2 TBSP chopped parsley
1/2 tsp salt
1/4 tsp pepper
1/8 tsp garlic powder
1 egg, beaten in 1/4 c cold water
1 can cream of mushroom soup
1 small can sliced mushrooms

Instructions
Combine all ingredients except soup and mushrooms. Form meat mixture into small 2 1/2" patties about 1" thick. Brown on both sides in nonstick skillet or in small amount of vegetable oil. Place patties in casserole. Mix soup and undrained mushrooms and pour over meat patties. Bake in 350 degree oven for about 30 minutes until gravy bubbles and turns slightly brown.
6 to 7 servings

This is not just for campfires. I made it often when the children were at home. This can be a one pan stove top recipe or oven casserole. You can even make it and put it into a slow cooker.

1# ground meat of choice
1 pkg. dry onion soup mix
1 can Pork & Beans - the size of can determines how large a family/group this will feed. Do not drain. You need the liquid for moisture in the dish.

Brown the meat, add soup mix and pork & beans. Heat thru and serve.

This sounds like it would be quite good, and it is certainly quick and easy. -- patrob

SPICY ORANGE BEEF
Ingredients

2 TBSP vegetable oil
1 lb round steak, cut into thin strips on the diagonal
1/4 c orange peel, cut into slivers
1 clove garlic, minced
1/2 tsp ground ginger
2 TBSP cornstarch
1 c beef broth
1/4 c soy sauce
1/4 c sherry or 1/4 c orange juice or 2 TBSP vinegar
1/4 c orange marmalade
1/2 tsp crushed red pepper flakes

Instructions
In a wok or skillet, heat oil over medium-high heat. Add beef strips 1/3 at a time. Stir-fry for 3 minutes or until browned, removing the done pieces to a plate lined with paper towels. Return all the beef to the wok. Stir in orange peel, garlic, and ginger and stir-fry 1 minute.
In a medium bowl, combine cornstarch, broth, soy sauce, sherry, marmalade, and red pepper. Pour this mixture into the beef, stirring constantly. Bring to a boil over medium heat and cook for 1 minute. Serve hot. Good with rice or noodles.

QUICK BEEF STROGANOFF
Ingredients

1 1/2 lbs ground beef
1 medium onion, chopped
1 clove garlic, crushed
1 can cream of mushroom soup, undiluted
1 c sour cream
3 oz can sliced mushrooms, drained
2 TBSP ketchup
2 tsp Worcestershire sauce

Instructions
Brown meat in skillet with onion and garlic. Add remaining ingredients, mix well, and heat thoroughly, but do not boil. Serve over noodles or rice. (Freezes well if reheated gently.)

BEEF FAJITAS
Ingredients

1 TBSP salt
1 TBSP sugar
2 tsp lemon pepper
1 tsp Accent
1 tsp paprika
1 tsp black pepper
1 1/2 lb tenderized beef flank steak
1 large onion, halved and sliced
2 large bell peppers, halved, seeded, and sliced (two different colors are nice!)
1 TBSP vegetable oil
8 flour tortillas
any add-ons you like: grated cheese, chopped tomatoes, guacamole, sour cream, salsa

Instructions
Mix salt, sugar, lemon pepper, Accent, paprika, and black pepper well. Sprinkle on both sides of steak and press into meat. Place steak in a plastic bag or covered container and refrigerate 3 or 4 hrs. When ready to serve, saute onion and peppers in vegetable oil until just crisp tender and keep warm. Grill steak for just a few minutes on each side. (It's thin and will be well-done quickly.) IMPORTANT: Slice steak thinly across the grain for tenderness. Wrap tortillas in a paper towel and microwave for about 15 sec to warm. Serve steak and tortillas with onions and peppers and your choice of add-ons.

RANCH BURGERS
Ingredients

1 packet ranch dressing mix
1 lb ground beef

Instructions
Mix ranch dressing mix and burger well. Form into 4 patties and grill until done. Serve with buns and other hamburger fixings, if desired.

GINGER BEEF
Ingredients

1lb sirloin steak, sliced into thin strips
3/4 c cornstarch
1/2 c water
2 eggs
1 large carrot, julienned
3 green onions, chopped
1/4 c fresh ginger, minced
5 garlic cloves, minced
vegetable oil for frying
3 tablespoons soy sauce
4 TBSP rice vinegar
1 TBSP sesame oil
1/2 c sugar
3 tsp crushed red pepper flakes

Instructions
Place cornstarch in a mixing bowl and gradually add water while whisking. Beat eggs into cornstarch/water mixture. Add sliced steak strips and toss to coat. Cook a quarter a time in deep fryer at 375 degrees. Drain on paper towels.
Put 1 TBSP of oil into wok or skillet. Stir fry green onion, carrots, ginger, and garlic for 1 min.
In a small bowl, combine soy sauce, rice vinegar, sesame oil, sugar, and red pepper flakes. Add to wok and bring to a boil. Add beef, heat thorough, and serve.

QUESADILLAS
Ingredients

8 oz beef steak *See NOTE at bottom
fajita seasoning, if desired
1 green pepper, seeded and chopped
1 onion, chopped
1 garlic clove, minced
1 TBSP cilantro, minced
6 fajita-size flour tortillas (about 6" diameter)
butter flavor pan spray
1 small tomato, diced
1/4 c mushrooms, sliced
1 1/2 c cheese of your choice, shredded
guacamole, if desired
sour cream, if desired
salsa, if desired

Instructions
Grill steak until it reaches desired doneness, slice into thin strips, and sprinkle with fajita seasoning if desired.
Saute peppers, onion, garlic, and mushrooms in a TBSP of oil until tender. Add cilantro.
Heat griddle or skillet over low heat. Spray one side of a tortilla with pan spray and lay that side down on the griddle. Sprinkle about 2 TBSP cheese, then about 1/3 of the steak, 1/3 of the pepper mixture,1/3 of the tomatoes, and another 2 TBSP of cheese. Top with another tortilla and press it down. (I use a small cast iron skillet to press the quesadilla together for a few minutes.) When the bottom tortilla is lightly browned and cheese has started to melt, remove the weight and spray the top tortilla with pan spray. Flip and cook on the opposite side. When nicely browned, cut into wedges and serve with guacamole, sour cream, or salsa, if desired.

*NOTE: Quesadillas can be made with your choice of ingredients. The meat could be beef of nearly any kind: steak, brisket, roast, or fajita meat, just cooked or leftover. You might prefer pork, chicken, or shrimp. I like to sprinkle some fajita seasoning on whatever meat I use.

SLOPPY JOES
Ingredients

1 TBSP vegetable oil
1/2 c onion, finely diced
1 lb ground beef
1/2 c ketchup
1/2 c tomato sauce
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/8 teaspoon cayenne pepper
salt, to taste
red wine vinegar, to taste
4 to 6 hamburger buns, toasted

instructions
In a large skillet, saute onion in oil until softened and translucent, about 3 minutes.
Add the ground beef to the skillet about 10 min until no longer pink. Pour off and discard any juices and fat that have accumulated in the skillet. Add ketchup, tomato sauce, chili powder, garlic powder, cayenne, and salt and stir well to mix. Cook, uncovered, until the meat is cooked through and the flavors are blended, about 20 min, stirring frequently. Stir in a bit of vinegar to taste, and then remove from heat. Taste and adjust the seasoning. Serve on toasted hamburger buns.

Crockpot Beef Tips #1
Ingredients

1/3 cup flour
1/2 tsp salt
1/8 tsp black pepper
2 lb beef sirloin tips
1/2 c onion, chopped
1 c mushrooms, sliced (or 7 oz can sliced mushrooms)
1 c water
2 tsp beef bouillon granules or cubes (I like 'Better Than Bouillon.')
1 tsp Worcestershire sauce
1 tsp tomato paste (or 2 tsp tomato sauce)
2 TBSP dry red wine (can be omitted)
hot noodles or rice, for serving

Instructions
Mix flour, salt, and pepper and toss with beef to coat. (At this point I like to brown the beef on all sides in a deep skillet with a little vegetable oil, though it can be put in the crockpot without browning.) Put beef in bottom of crockpot. Top with mushrooms and onions. Mix water, bouillon, Worcestershire sauce, tomato paste, and wine and pour over beef. Cover and cook on low for 5 to 6 hrs or until beef is tender. If you want to thicken the sauce, remove about 1/4 c sauce from the crockpot, add just a little water to cool it a bit, and whisk in about 1 tsp cornstarch. Return cornstarch mixture to crockpot and stir well. Serve over hot noodles or rice.

Crockpot Beef Tips #2
Ingredients

2 lb beef sirloin tips or stew meat
1 can cream of mushroom soup, undiluted
1 envelope dry onion soup mix
1 package dry brown gravy mix
1 1/4 c ginger ale or 7-Up®
7 oz can sliced mushrooms, drained
hot cooked noodles or rice, for serving

Instructions
I like to sear the beef on all sides in a deep skillet with a little vegetable oil, but it may be put in the crockpot without searing. Put beef in crockpot. In a medium bowl, combine mushroom soup, onion soup mix, and brown gravy mix. Stir in ginger ale, and add mushrooms. Pour over beef. Cover and cook until beef is done, on low for 5 to 6 hours or on high for 3 to 4 hours. Serve over noodles or rice.

Slow Cooker Beef Short Ribs
Ingredients

4 lbs beef short ribs
1/2 c soy sauce
1/3 c brown sugar
1 TBSP sesame oil
2 TBSP rice wine vinegar
2 green onions, chopped
4 cloves garlic, minced
1 TBSP fresh ginger, grated
salt and pepper to taste
pinch of crushed red pepper

Instructions
Combine all ingredients except ribs in large zip lock bag. Add ribs and marinate for at least 4 hrs.
Heat a large skillet over medium high heat and add a touch of olive oil and some cooking spray. Sear ribs in batches until browned on all sides. Spray slow cooker with cooking spray. Place ribs in slow cooker meat side down and pour marinade over them. Cover and cook on low for 5 to 6 hrs or until meat is very tender. Place sauce in pan and boil until it is reduced by half. Serve sauce with ribs.

Korean Stewed Beef
Ingredients

2 lb chuck steak cut into 2" chunks (or stew meat or short ribs)
5 green jalapeno peppers, left whole
1 c soy sauce
1 c brown sugar
1/2 c water
hot cooked rice for serving, if desired

Instructions
Put all ingredients into a heavy pot. (I use a cast iron Dutch oven.) Bring to a boil and then reduce to a simmer. Cover and cook for 1 hr or longer until beef is tender but not falling apart. Serve with sauce over rice.
4 to 6 servings

Instructions for slow cooker: Cook on high for 2 to 4 hrs or low for 6 to 8 hrs.

Here's the way my mother made meatloaf, and it's my favorite meatloaf recipe. This is not the kind of meatloaf that slices as it has a softer consistency. If you are looking for a meatloaf to slice, see *NOTE at the end.

Mother's Meatloaf
Ingredients

1 1/2 lbs lean ground beef
1 can tomato soup, undiluted
16 oz can diced tomatoes, undrained
1 medium onion, chopped
1 bell pepper, chopped
1 egg, lightly beaten
1 tsp dried parsley or oregano, if desired
1/2 tsp garlic powder, if desired
salt and pepper to taste
3 to 4 slices dry bread, torn into very small pieces or cut into cubes

Instructions
Thoroughly mix all ingredients, except bread, in large bowl. Add bread cubes and mix thoroughly again. Place mixture in a large casserole dish that has been sprayed with cooking spray. Shape into a mound slightly higher in the center. That way if any grease collects, it can be spooned out when meatloaf is done. Bake at 350 degrees for about 45 min or until browned. (I bake with the cover on for about half the time and then remove it to let the meatloaf dry out some.)

*NOTE: Some similar recipes that I have found online call for putting the mixture in a large greased loaf pan and baking at 350 degrees for 1 hr to 1 hr 10 min. Those recipes all omit the can of diced tomatoes; not adding the tomatoes would result in a drier meatloaf. I have not tried that method.

Meatloaf for Slicing
Ingredients

1 lb lean ground beef
1/2 c tomato soup, undiluted (or 1/2 c tomato sauce)
1 TBSP dried onion flakes *See NOTE at end.
1/4 c bell pepper, finely chopped, if desired
1/2 tsp dried parsley or oregano, if desired
1/4 tsp garlic powder, if desired
salt and pepper to taste
1 egg, lightly beaten
1 c dry bread, crumbled or cut into small cubes

Follow the instructions for the original recipe and bake the meatloaf iin a loaf pan to make slicing easier. Bake uncovered at 350 degrees for about 1 hr or until nicely browned.

*NOTE: You can add more or less of the onion and bell pepper or any of the seasonings to suit your taste. The bell pepper is the only one that adds moisture, of course, so chopping it very finely will spread it out and allow the meatloaf to hold together better.

Crispy or Soft Tacos
Ingredients

1 1/2 lbs lean ground beef (or ground turkey)
1 TBSP olive oil
3/4 c onion, finely chopped
2 cloves garlic, minced or 1/2 tsp garlic powder
2 TBSP chili powder
1 tsp oregano
1 tsp, ground cumin, if desired
1 c canned diced tomatoes with juice
salt and pepper to taste
2 TBSP cornmeal
12 crisp taco shells or 12 flour tortillas

Instructions
Saute onion in oil in a large skillet over medium heat until soft, about 5 min. Add garlic, chili powder, oregano, and cumin. Stir and sauté for 1 minute.
Add ground beef and stir to crumble beef and brown. Add tomatoes and simmer 5 min. Add salt and pepper to taste. Stir in cornmeal and continue cooking and stirring until mixture thickens.
Serve in crisp taco shells or roll in flour tortillas. warmed a few seconds in the microwave. Add your choice of toppings: shredded cheese, refried beans, guacamole, sour cream, .chopped lettuce and tomatoes.
6 servings of 2 tacos each

Cajun Skirt Steak with Corn

2 tbs unsalted butter
1 small onion, chopped
4 cups fresh corn kernels, from 8 ears
1 cup half and half
kosher salt and black pepper
1 1/2 pounds skirt steak, cut into 2 pieces
2 tsp blackening or cajun seasoning
4 cups mixed greens
1 cup cherry tomatoes, halved
1 tbs olive oil

melt the butter in a medium saucepan over medium high heat. add the onion and cook, stirring occasionally, until beginning to soften, 4 o 5 minutes. add the corn, half and half, 1/2 tsp salt and 1/4 tsp pepper and simmer jun til the corn is tender and the half and half is slightly thickened, 5 to 8 minutes.

meanwhile, heat broiler. season the steak with the blackening seasoning and 1/4 tsp each salt and pepper. place on broilerproof rimmed baking sheet and broil for 3 to 4 minutes per side for medium rate. let rest for at least 5 minutes before slicing

in a medium bowl, toss the greens and tomatoes with the oil and 1/4 tsp each salt and pepper. serve with the steak and corn.

tip - fresh corn is the best, but thawed frozen kernels also work in this recipe. to achieve a similar creamy consistency, add 1 tbs of flour to the softened onions and cook for 1 minute before adding the frozen corn and half and half

Roast Beef Made With Coffee

Heloise is a columnist in our local paper. in 1962 the original Heloise, her mom printed this recipe that she obtained from a chinese hotel. i'm serious. LOL

it is not necessary to use an expensive cut of beef to make this recipe.

take any cut of beef about 3 to 5 pounds. cut slits into the meat. insert slivers of garlic down into the slits. those who do not like garlic can use onions instead.

the chinese cook did use both, one onion sliver and one garlic sliver.

pour 1 cup vinegar overthe meat and make sure it runs down into the little slits where the garlic and onion slices have been placed.. put this in the fridge and leave it for 24 to 48 hours.

when ready to cook place in a big heavy pot and brown in oil until nearly burned on all sides.

pour two cups strong (brewed) black coffee over the meat.add 2 cups of water and cover. simmer for 4 to 6 hours. season with salt and pepper 20 minutes before serving.

if you cook your roastto fast or the lid is not on tight enough, you may need slome additional water. this does not change the taste of your roast

however, don't let the roast swim. never add moe than 1 cup of wter at a time after the mixture has begun to boil down.
