I was eager to play with our new "toy" and wanted to create a cubit of my own as soon as I joined. I decided to put some of my quick and easy recipes into a private cubit and let my children and several friends access them. Then I decided to make the cubit public and encourage everyone to share their good recipes that are fairly quick and easy to prepare.
I really enjoy cooking and thought when I retired a few years ago that I would have lots of time to spend in the kitchen. I've always over-estimated what I can do in a day, and life has a way of filling up "extra" time. Still DH and I prefer to eat at home most of the time, and I like to be able to share meals with my mother, who is also my next-door neighbor.

Thanks, Lee Ann. That's a good idea, and I had wondered about including a casseroles/ one-dish meal forum in the beginning. I have been trying to put each casserole in the category that fits the main ingredient, but sometimes it's hard to decide if it is a pasta or a meat dish, for example. Having casseroles in one forum would make it easier to browse when looking for something to make for supper. Then I'll just add links in the other forums when appropriate. I wish cleaning house were as much fun as playing with Cubits!
I'm retired and the kids are grown, or I would not be playing like this. However, I am going to have to take a day or so to clean and catch up on laundry.
That ought to work. I usually make a very plain tuna salad with just tuna, Miracle Whip, sweet pickle relish, and some minced onions. The mustard would be a nice addition to the ham salad. Thank you!

I have a Vitamix, and I put small pieces of ham in there, and chop it up fine, and then add some sweet pickle relish and my husband likes it with Miracle Whip. I prefer Mayo. I think a lot depends on what you've grown up on.
Polly, it's good to see you here! It's funny, but my DH likes mayo and I prefer Miracle Whip. When I am making sandwiches, I always put the bread for his on the left and mine on the right so I don't get them mixed up.

I like the Miracle Whip too, just not as well as the mayo, but when making tuna or ham salad I usually just use the Miracle Whip to make things easier, rather than making two different sandwiches. But if I'm going with sliced meat, I normally put Miracle Whip on my husbands and mustard on mine.
Italian loaf sandwiches for dinner tonight. We had a huge breakfast out.
Just found this Cubit. I am not the cook here, DH does that chore. But I am always looking for good recipes fro him to try. We like quick and easy things for during the week when he works and during the summer when there are so many other things to do and get done!

We printed out a couple of the pasta dishes today to try. I will look thru what he has. He does a lot of Emmeril Lagasse's (sp) stuff so they aren't quick! But he has some that would fit here.
We like a little hard boiled egg in our ham salad or tuna.
That's why I put "mostly" in the name of this cubit! Sometimes it's worth extra time and effort to prepare something good. All recipes are welcome, though I do try to keep adding some that qualify as quick and easy as well.
For our lunch/main meal today, DH picked up enchilada specials from the drive-through window of a new little Mexican restaurant. After we spent the entire morning trying to pen obstinate cattle, which still are not in the pen, no recipe looked quick enough or easy enough.

Pat, so good to see cubits up again! I have two slabs of "beef shoulder Texas broil" in the fridge. Frankly, I've never seen it labeled "Texas" broil; it's always been London broil. It must be the same cut, right?
Anyhoo, I need to cook it today and I want to divvy it up and make different dishes. There are about 3 3/4 pounds of beef. I also have a 1 1/2 pound pork roast. I thought I might grind some pork and beef together to make a meatloaf. Any suggestions, Pat? Anyone?

According to what I found online, London broil is flank steak and Texas broil is chuck shoulder steak or roast, depending on the thickness. Grinding should work fine. If you are going to grill some of the Texas broil, it's recommended to marinate the meat for several hours to make it more tender. Another suggestion was to cook it in a crockpot. Here's a recipe that uses the conventional oven and keeps in the juices to make the steak tender: Chuck Steak and Veggies.
Some of the pork roast would be good in carnitas to wrap in a tortilla!
Let us know what all you decide to cook up! I think we are having sandwiches today. It's hot and humid, and I don't want to cook anything.

Thanks, Pat. I may try the beef recipe - if it isn't too hot to keep the oven on that long. I think that labeling is just a ploy to get someone to buy a cut they know nothing about. London and 'Texas' is the same here. Wish I had my outside kitchen done; that would be the place to cook now!

I just noticed where you live, and I agree it is probably too hot to use the oven that long. Slow cooker time for sure. We had to stop and change a tire somewhere in Arizona one summer when the temp was 118 degrees. I had always heard Arizona heat didn't feel "that" hot because of the low humidity. I'll disagree!
