2 lbs ground beef
1 medium onion, chopped
12 corn tortillas, cut up
8 oz Velveeta cheese, cut into chunks
1 can cream of mushroom soup
1 can cream of chicken soup
1 c salsa (mild to hot, your choice)

Brown ground beef. Add remaining ingredients and simmer. Pour into greased casserole and bake in 350 degree oven about 30 min until lightly browned and bubbling.

One of my favourites and so easy!

Cottage Pie

Brown a half pound or so of hamburger with garlic, onions, parsley, sage, rosemary and thyme.
Boil some potatoes and mash them (I don't use cream in mine)
Grate a couple of cups of cheddar cheese.

Put the burger in the bottom of a casserole dish. Put the cheddar cheese on top, put a layer of frozen spinach on the cheese. spread your mashed potatoes on top and scoop out a small vent hole in the centre.
Bake at 350 until bubbly.

16 oz can diced tomatoes
1 c salsa (mild to hot, your choice)
4 oz sliced mushrooms or small can of sliced mushrooms
1/2 c stuffed green olives, sliced
1/2 c ripe olives, sliced
1/2 c onion, diced
4 to 6 oz Velveeta cheese in chunks
8 oz hot spaghetti, cooked according to package directions and drained

Mix cheese and spaghetti and stir to coat spaghetti evenly with cheese. Pour into baking dish and set aside.
Brown beef in large skillet. Add mushrooms and onions and cook until tender. Stir in salsa, tomatoes, and olives.
Pour meat mixture over spaghetti and mix gently.
Cover and bake in 350 degree oven for about 30 min until hot and bubbly.
6 to 8 servings

1 can refrigerated crescent rolls
1 lb ground beef
1 c taco sauce, mild to hot or 1 envelope taco seasoning mix and 1/2 c water (*NOTE at bottom)
1/3 c chopped pimiento-stuffed green olives (or ripe olives if you prefer)
14 oz can diced tomatoes
1 1/2 c crushed tortilla chips
1 c sour cream
1 c shredded Cheddar cheese
chopped tomato, if desired
shredded lettuce,if desired
avocado slices, if desired

Separate rolls into triangles and place in 9" pie plate with points meeting in the center. Press edges together for form a crust. Flute the upper edge.
Brown ground beef, cooking over medium heat for 10 min and stirring to crumble. Drain off any grease. Add taco sauce (or taco seasoning mix and water) olives, and tomatoes. Reduce heat and simmer 5 min or until thick and most of liquid has evaporated..
Spread half of tortilla chips in pie shell. Spoon meat mixture over the corn chips. Spread sour cream over meat layer and sprinkle evenly with cheese. Top with remaining corn chips.
Bake in 350 degree oven for 25 min.
Serve with tomatoes, lettuce, and avocado slices, if desired.
6 to 8 servings

1/2 c onion, chopped
1/2 c green pepper, chopped
1 1/2 TBSP chili powder
1 tsp oregano
1 tsp basil
16 oz can diced tomatoes, undrained or 3 c fresh tomatoes, chopped
1/2 c water (divided use)
2 TBSP flour
1 c Cheddar cheese, shredded
1 c Monterey jack or mozzarella cheese, shredded
1/2 c ripe olives, sliced
6 oz pkg cornbread mix

Salt meat and brown in large skillet. Add onion and peppers and cook until tender. Add seasonings, tomatoes, and 1/4 c water. Cover and simmer 10 min. Stir remaining water and flour together until smooth. Pour into meat mixture.with flour and continue to cook and stir until thickened. Remove from heat. Stir in cheeses and olives. Pour into large baking dish. (I make this in a large cast iron skillet and just go from the stove top to the oven.)
Mix cornbread according to package directions and pour over meat mixture. Bake in 425 degree oven for 15 to 20 min or until browned.

1 lb ground beef or Italian sausage or mixture of the two
1/2 c onion, chopped
1 clove garlic, minced
0ptional extras: 1/4 c chopped bell pepper, black olives, and/or mushrooms
8 oz egg noodles, cooked and drained
26 oz jar spaghetti sauce
1 tsp Italian seasoning
2 c (8 oz) mozzarella cheese, shredded (divided use)
4 oz sliced pepperoni

Cook ground beef, onion, and garlic in skillet over medium heat until beef is browned. Drain. Stir your choice of optional ingredients, pasta, sauce, Italian seasoning, and 1 c cheese into the meat mixture. Place mixture into greased 13" x 9" baking dish. Sprinkle with remaining cup of cheese and top with pepperoni. Bake in 350 degree oven for 25 to 30 min.

2 TBSP vegetable oil
1 1/2 lb lean ground beef or stew meat, cut into bite sized pieces
1 large clove garlic, minced or 1 tsp instant minced garlic or 1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp pepper
1/2 tsp thyme
6 medium potatoes, peeled and sliced
2 large onions, peeled and sliced
1 can condensed cream of mushroom soup
1/4 cup water

Put vegetable oil in skillet and lightly brown beef on all sides. Remove any fat. Add garlic, salt, pepper, and thyme. Put 1/2 potatoes and onions into crockpot sprayed with cooking spray. Top with beef and then the rest of the potatoes and onions. Stir 1/4 c water into the mushroom soup and pour over top of potatoes and onions. Cover and cook on low for 6 to 8 hrs or on high for 3 to 4 hrs.

BEIJING BEEF (similar to Panda Express')

1 lb sirloin or round steak, sliced across the grain into thin strips
for marinade
1 egg
1/4 tsp salt
2 TBSP water
1 TBSP cornstarch
for frying
6 TBSP cornstarch (use more if needed to coat beef)
vegetable oil for frying
for sauce
8 TBSP water
4 1/2 TBSP sugar
3 TBSP soy sauce
2 TBSP ketchup
2 TBSP vinegar
1/2 tsp red pepper flakes (or more if you like it hot)
1/2 tsp orange zest, finely grated
4 tsp cornstarch
for vegetables
1 TBSP vegetable oil
1 tsp garlic, minced
1 medium red bell pepper, chopped
1 medium green bell pepper, chopped
1 c onion,
hot cooked rice

Put beef slices in a gallon size plastic storage bag or other container. Whisk all marinade ingredients. Pour over beef slices and mix well. Let stand for 15 min.
Mix sauce ingredients and set aside.
Remove beef from bag and toss with 6 TBSP cornstarch to coat. Deep fry until golden brown. Drain on paper towels.
In a wok or large frying pan, stir fry garlic in 1 TBSP vegetable oil for 5 sec. Add peppers and onions and stir fry for 2 min longer or until crisp tender. Remove from wok and set aside.
Bring sauce mixture to a boil in the wok. Then add beef and vegetables and stir to coat with sauce. Serve with hot cooked rice.

Burger Mac

1 lb ground beef
1 c onion, chopped
1 c green bell pepper, seeded and chopped
1 tsp seasoned salt
1/4 tsp cayenne pepper
1/2 teaspoon celery seed
28 oz can diced tomatoes
2 TBSP Worcestershire sauce
2 TBSP parsley, chopped
2 c macaroni, uncooked

Cook macaroni following directions on package, drain, and set aside. (If you prefer, you can wait and add the uncooked macaroni and an extra cup of water to the beef and tomato mixture and cook it all together.)
Brown the ground beef in a large skillet over medium heat. Add onion and pepper and cook until tender. Add remaining ingredients except macaroni. Simmer about 10 min. Stir in cooked macaroni and simmer another 5 min.
4 to 6 servings

1 lb steak, sirloin, round, or flank, sliced thinly across the grain
for marinade
....2 tsp soy sauce
....2 tsp rice wine, dry white wine, or chicken broth
....1/2 tsp cornstarch

for sauce
....1/4 c oyster sauce
....2 tsp rice wine or dry white wine or chicken broth
....2 TBSP soy sauce
....1/2 c chicken broth
2 c broccoli florets
2 1/2 TBSP vegetable oil
2 cloves garlic, very finely minced
1 tsp cornstarch, dissolved in 1 TBSP water

Mix beef marinade ingredients in a gallon size plastic storage bag or medium bowl. Add the beef slices, make sure they are coated with marinade, and let stand 10 min.
Mix sauce ingredients in small bowl and set aside.
Cook broccoli in boiling, salted water about 2 min or until crisp tender. Drain and set aside.
Remove beef from marinade. In a wok or large skillet over medium heat, stir fry beef in oil about 2 min or until very slightly pink. Add garlic and stir fry 30 sec longer or until beef is no longer pink. Add sauce and broccoli and bring to boil. Add cornstarch dissolved in water and continue to cook, stirring, about 30 sec or until sauce is thickened.
Serve with hot cooked rice.

1 1/2 lbs ground beef
1 c onion, chopped
1 TBSP chili powder
2 (10 oz) cans enchilada sauce *See NOTE at end.
1 tsp garlic salt
1/4 tsp pepper
vegetable oil
12 corn tortillas
4 c cheese, shredded (your choice of Cheddar, Monterey Jack, cojack)

Cook beef and onions; drain off fat. Add chili powder; cook and stir for 1 min. Stir in 1 can enchilada sauce, garlic salt, and pepper. Simmer for 20 min. Wrap tortillas in a paper towel and heat for 15 to 30 sec in microwave to soften. Spoon 1/4 cup meat mixture on each tortilla. Sprinkle with 1/4 c cheese. Fold tortilla sides to overlap and place in large baking dish with lapped side down. Combine remaining meat mixture and can of enchilada sauce; pour over tortillas to cover. Bake, covered at 350 degrees for 20 minutes. Uncover, sprinkle with remaining cheese, and bake 5 to 10 minutes more.
6 to 8 servings

Fiesta Cheeseburger Casserole
(my sister makes a dish she calls cheeseburger casserole and for my family I made a few changes and added the "fiesta" to the name.) I just "make" this so will try to put it into a recipe

3 lbs gr. beef, browned
1 bag frozen corn (if you can find the kind w/red peppers they are best)
2 cans Campbell's Fiesta Nacho Cheese Soup
2 pkg Jiffy Corn Bread Mix (or other similar) mixed following directions on package

Mix the first 3 ingredients and divide into 2 9" X 11" casserole dishes. Top with the corn bread mix and bake at 350° for approximately 30 minutes or until corn bread is golden brown on top.

After cooled divide into individual serving size freezer containers and freeze.

To thaw, cook in microwave for 3 min. on 50% power. Remove lid and continue to heat until hot in the center.

Easy Lasagna
* 2 pounds lean ground beef (browned)
* 2 or 3 jars Spaghetti Sauce (any type will do) (not sure of the size maybe 24 oz or something like that)
* 12 lasagna noodles
* 16 ounces cottage cheese
* 1 egg
* 1/2 teaspoon salt (optional)
* 3/4 pound shredded mozzarella cheese
* 3/4 cup grated Parmesan cheese
* 1/2 cup water

Mix meat and sauce in one bowl. (Do NOT cook noodles)
Mix cottage cheese, egg and salt (optional) in another bowl

To assemble, spread meat sauce to cover the bottom of a 9x13 inch baking dish**. Arrange 3 noodles lengthwise over meat sauce. Spread with one half of the cottage cheese mixture. Top with a third of mozzarella cheese. Spoon meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Pour 1/2 cup water over the top (this allows the noodles to cook without drying out soaking all the liquids from the tomato sauce) Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
# Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

**This recipe should make enough for 2 9X13 inch baking dishes. If you don't want to make both at once, you can also freeze half of the meat sauce and cottage cheese mixture for use later.

Crockpot Ground Beef and Cabbage

6 c cabbage, shredded (can use 1 lb bag of slaw mix)
1 lb lean ground beef
1 medium onion, finely chopped
1 c long grain rice
1/2 tsp salt
28 oz jar chunky pasta sauce
1/2 c water
1/2 tsp dried basil leaves, crushed

Put 3 c shredded cabbage in large crockpot. Layer remaining ingredients in this order: ground beef, onion, rice, and remaining cabbage. Sprinkle salt on top. Combine pasta sauce, water, and basil and pour over cabbage. Cover and cook on low 5 to 6 hrs or until rice is done.
6 servings.

Slow Cooker Tamale Pie
for cornbread topping

3/4 c cornmeal
1 1/4 c flour
2 TBSP sugar
1/2 tsp salt
1 tsp baking powder
1 c milk
1 egg
3 TBSP vegetable oil

for filling
1 lb ground beef, browned, or other ground meat, if desired
15 oz can black beans, drained and rinsed
28 oz can diced tomatoes, undrained
15 oz can whole kernel corn, drained
1 c onion, diced
1 c cheddar or Monterey jack cheese, shredded
4 tsp chile powder
1 tsp salt
1/2 tsp garlic powder

Put all ingredients for filling into slow cooker that has been sprayed with cooking spray. Stir well.
In a mixing bowl, combine all dry ingredients for topping. In another bowl, mix milk, egg, and oil. Pour milk mixture into dry ingredients and stir just until mixed. Spoon batter over filling and spread evenly.
Cover and cook on low for 4 to 6 hrs or on high for 2 to 4 hrs.

Chuck Steak and Veggies

1 to 1 1/2 lbs chuck steak
1 envelope onion soup mix
4 carrots, cut
3 stalks celery, cut
4 medium potatoes, cut
3 TBSP butter
1/2 teaspoon salt

Tear off a piece of heavy duty aluminum foil large enough to enclose steak and veggies. Put steak in the center, sprinkle with onion soup mix, and then cover with vegetables. Dot with butter and sprinkle with salt. Fold foil over and seal well. Place in shallow baking pan and bake at 400 degrees for 1 to 1 1/2 hrs or until meat is tender.

Burrito Casserole

1lb ground beef
1 c onion, chopped
1 package taco seasoning
6 large flour tortillas
16 oz can refried beans
2 to 3 c cheddar cheese, shredded
1 can cream of mushroom soup, undiluted
1/2 c sour cream
hot sauce or salsa, if desired

In a large skillet brown ground beef and onion.
Drain and add taco seasoning and refried beans.
In another bowl combine cream of mushroom soup and sour cream.
Spray casserole dish or baking pan with cooking spray.
Spead half of sour cream mixture in bottom.
Tear up 3 tortillas and spread over sour cream mixture.
Place half of meat mixture on top of tortillas.
Sprinkle half the cheese and hot sauce, as desired, on top of meat.
Repeat layers, ending with cheese and hot sauce.
Bake uncovered at 350 degrees for 25 to 30 min or until hot and bubbly and cheese is melted.

Beef and Cheese Enchiladas con Queso (with Cheese Sauce)

1 lb ground beef
1 large onion, chopped
8 oz sharp cheddar cheese, shredded
12-15 corn tortillas
for sauce
1/2 stick butter or margarine
4 TBSP flour
2 c milk
8 oz American cheese, white or yellow, cut into chunks
1 small can chopped green chiles

Spray large shallow baking dish with nonstick spray.
Brown beef in skillet. Season with salt, pepper, and garlic to taste.
Add onion when beef has nearly lost its pink color and cook and stir until onion is tender.
Soften tortillas by warming each in a lightly greased skillet about 5 seconds on each side and stack in end of baking dish to keep warm until used.
Put a TBSP or two of meat mixture and Cheddar cheese in the middle of each tortilla and roll.
Place enchiladas in baking dish seam side down.
for sauce
In a saucepan melt butter.
Slowly add flour and stir about 1 min to make a paste.
Add milk slowly, stirring or whisking constantly.
When mixture is boiling and thickened, remove from heat.
Add American cheese and chiles and stir until cheese is melted.
Pour sauce over enchiladas.
Cover baking dish with aluminum foil and bake at 350 degrees about 25 min.

Electric Pressure Cooker Sloppy Joes

1 lb ground beef
1/2 c onion, chopped
4 cloves garlic, minced or 1/2 tsp garlic powder
1 (14 oz) can diced tomatoes
1/2 c water
2 tsps brown sugar
1 TBSP Worcestershire sauce
1 tsp chili powder
1/2 tsp ground dry mustard
1/4 tsp salt
1/8 tsp black pepper

Spray inside of inner pot of pressure cooker with cooking spray.
Using saute setting, brown and crumble ground beef.
When meat is nearly done, add onion and garlic and continue to saute and stir until onion is translucent.
Add remaining ingredients.
Set for 5 min cook time and close lid, making sure to close vent.
Do a quick release, and continue to cook and stir on saute setting until sauce is the consistency you want.
Serve on warm hamburger buns or other bread of your choice.
