it's old fashioned boiled fudge. I'm sort of famous for making it around my family and work family.
My next house will have no kitchen - just vending machines and a large trash can.

I'd love to have you recipe! Our family loves ANYTHING peanut butter! I've not ever heard of boiled fudge. By birds eye, do you mean hardball stage? Just hot enough to form a ball? I'm getting older, not quite "old" so I CAN be trained. LOL

well, its not made from peanut butter chips or the fluff stuff. maybe i should have said old fashioned fudge. (but you do boil it 5 minutes after it comes to a boil)

I'll have to make a batch and take pics, I suppose. (it'll be a sacrafice, but i'll do it, lol)
it refers to the bubbles when it's boiling. they look like bird's eyes.

hey....that was the way I was taught.

i'll try to get it up tomorrow.

I grew up on Gma's old fashioned fudge... she would beat that stuff until I thought her arms were going to end up like Popeye's! Birds eye boil would be to bring to a boil slowly so the bubbles would be the size of a bird's eye and cook to the soft ball stage...?

Yes, but you don't have to beat this fudge. You're right on with the birdseye boil. it's also when the mixture is at the stage where when it's stirred, the bubbles don't dissipate.

its the one and only time Ive ever heard that expression either. But a 'good ol' country girl' taught me in the 80's and Ive made it the same ever since. almost in the same pan too! ( my daughter equates this candy with Love Lovey dubby )

There's No candy thermometer....No beating...and most of all, No marshmallow creme.

I'm sorry..I'm a MC snob and candy made with it, isn't 'fudge' to me. I hope I don't offend anyone by saying that...there's just a difference in the taste and the texture to me. thats MY opinion.

this is the first chance I've had to sit down today. I'll finish my coffee and this juicy apple, then I'll post it.

You girls are making me laugh. And I still want fudge. LOL I actually have to make a double batch of the regular PB MC fudge for my neighbor. He is 71 and he LOVES the stuff. He just gave me a bunch of sausage and beef patties and I promised him a pan of fudge. :)

what's funny, is that I never make the stuff for me. I can lick the spoon and then I'm done. Ive had enough. now chocolate.....I would love to find home made choc fudge recipe that i can do, but i cannot make it. I make what my mom called spoon candy. lol. it doesn't set so you have to eat it with a spoon.

Nannie's Peanut Butter Fudge (from Mary)

4 cups of sugar
1 1/3 cup evaporated milk (not condensed milk)
1 jar peanut butter (18 oz)
2 tsp vanilla

1. Butter or spray 9X13 pan
2. In a medium pan, combine sugar and milk.
Over medium heat, bring mixture to a boil, stirring often.
Once this begins to form a ' birdseye boil' *, stir constantly, boil for 5 minutes.
3. Remove from heat, then immediately add the peanut butter and vanilla.
Stir until mixed completely.
4. Pour into buttered dish and spread evenly.
5. Let cool completly before cutting.

* a birds eye boil is when the bubbles are clear and shiney, the same size of a bird's eye, and the bubbles cannot be stirred down.

~This is a double batch. To make 8" x 8" batch, cut recipe in half.
The only time this recipe has ever failed is when I tried to triple it.
~I use a timer every time I make this. When it has boiled for 4 1/2 minutes, I usually turn the burner off, still leaving the pan on the heat, then start adding peanut butter.
~Before my mixture begins to boil, I prep my jar with a knife or spatula to loosen the peanut butter from the sides of the jar because speed is of the essance.
~Cheap peanut butter works fine on this recipe.
~I use creamy pb because when I use chunky pb, it doesn't slice as neatly, not because of difference in taste

Thanks, I'm going to try this, but don't have enough PB at the moment, which is weird for us! We always have an extra jar in the pantry, but I made so much fudge and such over Christmas, I just haven't stocked back up!

My mom made a chocolate fudge recipe when I was about 14, poured it out into a pan, it never did set up. The next morning, she tried to cut it, but it was more like caramel, big sticky threads... it was the most wonderful stuff I ever tasted! But while we were at school, she recooked it and it finally set, but I don't think it was as good as when she messed it up originally Rolling my eyes.
Now Gma could make a really good chocolate fudge (w/no MC), like I said, she beat the dickens out of it, I just couldn't reproduce it, always too grainy or hard. Like the old fashioned popcorn balls.....you have to know what you're doin'.

thats what we call spoon fudge. my neighbor makes it using regular milk and cocoa but I can't get it right.

oh. if you make half of a batch, you can use 1 cup of pb.

i dont have a full jar of pb either, but i have fresh bread here. i can't do both, lol.
