|this isn't a recipe, but a method of making squash healthier.
Slice yellow crook neck squash into slices and place on baking sheet that's been sprayed with baking spray.( I leave the peeling on)
On each slice sprinkle enough cornmeal to cover. Salt and peppter to taste.
Bake till tender. 375 degrees.
*** my SIL dips each slice in melted butter before sprinkling cornmeal but I'm trying to watch fat intake. and if you like crunchier, you can bake longer.
My next house will have no kitchen - just vending machines and a large trash can.
