|Yes, but you don't have to beat this fudge. You're right on with the birdseye boil. it's also when the mixture is at the stage where when it's stirred, the bubbles don't dissipate.
its the one and only time Ive ever heard that expression either. But a 'good ol' country girl' taught me in the 80's and Ive made it the same ever since. almost in the same pan too! ( my daughter equates this candy with Love )
There's No candy thermometer....No beating...and most of all, No marshmallow creme.
I'm sorry..I'm a MC snob and candy made with it, isn't 'fudge' to me. I hope I don't offend anyone by saying that...there's just a difference in the taste and the texture to me. thats MY opinion.
this is the first chance I've had to sit down today. I'll finish my coffee and this juicy apple, then I'll post it.
My next house will have no kitchen - just vending machines and a large trash can.
