I like my salmon broiled or pan fried in a little olive oil & butter. Make a little dill sauce with mayo if I don't have sour creme. The cod was fabulous!!!!! I mixed some spices, lemon juice, soy sauce & mayo (I didn't have plain yogurt or would have used that). Marinated for an hour. Dredged in panko bread crumbs. Cut two big tomatoes in half. Put the tomatoes & fish in a baking dish with olive oil & butter on the bottom. Poured a little olive oil over the tomatoes. Baked for 30min (convection cook - probably longer w/regular oven) at 400deg. Had some fresh green beans on the side. DH (not a fish eater) was in heaven! Definitely a winner recipe. Tam |

That all sounds great, sadly the going been tough in the kitchen here lately and I'm using Campbells condensed Soup cream sauces. and pasta/ noodles. Kids scarf that up.. Helped DS make his fave Salmon wiht Spinach Cream Sauce Pasta Saute two TB minced shallots (onions) in olive oil, add salmon liquid from can of salmon, add one cup whipping cream (we use evap milk) and TB Dijon mustard, simmer, add thawed drained chopped spinach (one box) and flaked salmon from can, toss with pasta went to restaurant and they had Stuffed pepper Soup! It must have been a salmon day. Went to a party today, one of the offerings were salmon croquets. They were delicious. They had Whole filet mignon sliced with horseradish creme, a pasta dish of cavetelli, broccoli rabe and sausage a'oil, fresh green beans with sauteed mushrooms, a wonderful coucous dish with tileggio cheese and parsley, shallots and pimentos. There was fresh mozzerella with tomatoes and basile, 5 kinds of roasted peppers, cold marinated eggplant with tomato garlic salsa, and a beautiful salad of rockette , mache, candied pecans and fresh cherries in a lite vinagrette. |

Sounds delishiss!! Maybe it was Mediterranean Day. My sis and I tried a local place and had an awesome dinner of spankopita, a great greek salad (not just an american salad with some feta on top) bread with herbed oil, and a shrimp broccoli pasta. ![]() Cod is one of my favorite fishes. Actually, I prefer most cold water fishes over the warm water ones. Spanokopita is one of my favorite dishes. I will often have that for dinner. I love that you can buy it frozen at so many places now. It's a great way to work more spinach into your diet. Greek salads are wonderful. Anybody have a good recipe for one? |

Storm my SIL's mom makes a salad with spinach, walnuts, craisins, grapes, onions and a sweet type of dressing. It's rather tasty. I can probably get the recipe if you want it It happens in a flash, but the memory of it last forever. It can not be borrowed or stolen, and it is of no earthly good until it is given away. Storm here is the recipe for the spinach salad I was talking about: 6 ingredients quantities are whatever you want. 1)baby spinach leaves, 2) red grapes halved 3) craisins 4)pistachios or walnuts 5) feta cheese And lastly Ken's light sweet vidalia onion dressing. Combine 1-5 and add the dressing about 1/2 hr before serving. Toss, serve and enjoy. *Momma's note: less is probably best with the dressing, you just need enough to wilt the spinach. I am a late bloomer. Had baked acorn squash with dinner and am in love with it! Its sweet and satisfying and low in calories and high in nutrients. How could I have not realized how good it is???? Grilled pork chop, acorn squash & garden fresh green beans. Fantastic dinner. Used the extra green beans with grape tomatoes to make a nice salad for tomorrow. I love summer eating. Tam |

Tam, Did you cut it into two or slice it? I used to make it cut into two and stuffed, but stopped that years ago because of the sugar load between the squash & the stuffing. Then I started baking it cut into slices, which I liked a lot better. I was busy last night and made a quick dinner. Had a wonderful plateful of sliced garden tomatoes with fresh mozzerella bocconcini with basile from my garden. Chopped some fresh garlic, ground some fresh pepper and drizzeled good olive oil over it. Had a "Manokopita" from Trader Jo's in the freezer. Had half of that with the 'maters. It is the same almost as Sponokpita, but instead of being stuffed with Feta & Spinach, it's filled with Feta & Mushrooms. It was delicious!! Had a spinach/banana/peach & Kefir smoothie for breakfast today. |

You are eating well Stormy! I cut the squash in half, put a little water at the bottom of the pan and covered it with foil. Then scooped it out when it was cooked, put a little butter & salt and enjoyed it plain. I just had leftover squash for dinner tonight. Its gonna be on my menu more often. Tonight, wild alaskan salmon, squash & garden green bean, tomato salad with garden basil in a light balsamic vinaigrette dressing. Very simple cooking but with great ingredients, that's the way its best, I think. Tam |
