That sounds yummie Sally. My favorite omelettes are usually a healthy mushroom spinach combo or the deadly but irresistable cheese, onion bacon combo.
In Paris there are bistros where you order your omelette by the type of mushroom you want in it. They post the selections daily. Varieties are never mixed in one omelette. They are served with a salad of leafy greens with no other veggies in a light vinagrette and a crusty baguette. Oh sweet heaven!

Wow, That sounds heavenly. I make a crustless pie from eggs, spinach, artichoke hearts, sour cream and parmesean. It is wonderful. That was a recipe from a friend who passed away. I might be able to wing it without the actual recipe. hmmm, I wonder if there might not have been some mayo in it. It was seasoned with black pepper, salt, nutmeg & red pepper flakes.

Ronnie, The more you use those pans, the less things will stick. keep oiling the bottom & sides and heat them, then just wipe the oil out with a paper towel, no rinsing.
Allison, That flan recipe looks fabulous!! I think that I remember earmarking that in one of his cookbooks!! I'll have to see if I have a suitable pan!!! Thanks
I could never find the right one until I tried the small frying pan... the last flan took at least 3 tries to get the caramel right.. so frustrating.. but now that I learned the corn syrup trick from Alton Brown... life is good!!!
please don't ask how much.. I don't measure much unless baking... I just drizzled some in the pan before I put the sugar in.. and once the syrup bubbled.. I mixed the sugar up a bit so it coated more and more of it.. but gentle gentle
