My stove had a busy weekend (so busy, I'm just getting around to posting about it ![]() I'm linking to recipes so people can get an idea, but they probably all differ a bit from the ones I made out of a cookbook that my lovely Turkish friend gave me. The menu: Tomato-Cucumber salad with herb vinaigrette and olives Cacik (http://www.food.com/recipe/turkish-cacik-36126 - the photos here are a bit off, authentic cacik should be a thin soup, not a heavy sauce or dip) Hummus Baba ganoush (http://en.wikipedia.org/wiki/Baba_ghanoush) Sigara boregi (literally "cigar pastries" http://mideastfood.about.com/od/dessertssweetspastries/r/sig...) Borek (like a Greek spanikopita, but we used chard) Imam bayildi (http://www.whats4eats.com/vegetables/imam-bayildi-recipe) Stuffed zucchini, with the same filling as the imam bayildi Kisir (http://mideastfood.about.com/od/soupssalads/r/kisirrecipe.ht...) Chickpeas in spicy tomato sauce Butternut squash dessert (http://almostturkish.blogspot.com/2006/10/turkish-pumpkin-de...) Lokma (fried pastry in syrup... it's heavenly http://mideastfood.about.com/od/dessertssweetspastries/r/lok...) The last dessert I don't know the name of, but it was a milky pudding with dried fruit, nuts, and cinnamon that my friend brought. At the end of the night, my friend made real Turkish coffee, which is strong, but not quite as strong as espresso, sweet, and served in tiny cups. When you're done with your drink, the grounds can be read like tea leaves, though no one in our group was educated in that art. Needless to say, we all ate way too much. ![]() ![]() |

Bit, This sounds like an excellent menu. ![]() That Cacik sounds very interesting. I wouldn't have thought to serve mint with cucumbers but it sounds quite refreshing. Do you serve the serve any type of a dipping sauce with the Sigara boregi? The entire dinner sounds good. I bet the pudding was good too. You might have eaten too much, but it was all wonderfully nutritious stuff and fun!! ![]() Thanks for posting it. ![]() |

No, no sauce with the boregi. There are herbs mixed in with the cheese filling, so it's plenty flavorful. I completely forgot to take a photo of the spread. I'm hoping I can get one from a friend. If I do, I'll share. The food completely covered my dining table, so we had to all fill our plates and sit on the couches to eat. |

Bit, Oh yes, please do! ![]() |

No, I was hoping to get some Raki, which is the national drink of Turkey, but wasn't able to. It's not available in Virginia's ABC stores (state monopoly, so the options are limited), so I've only had it when one of my Turkish friends brings it back from a trip home. But we made do with a Sam Adams sampler ![]() |

Beer sounds like it would go very well with that array. The feta is salty and would compliment the beer. Sounds like you had a real winner Bit! ![]() |

But you can probably eat too much yet not feel ill like you can with meat-heavy meals. What an interesting meal! "If you bring joy and enthusiasm to everything you do, people will think you're crazy" W. Haelfeli, New Yorker cartoon |

I just put 6 meatloaves in the oven. Three are going to a party and three are staying here. Safeway had a BOGO on ground meat today and I had everything else on hand. I also had enough to make and freeze 8 burgers. It took a lot of will power but I passed up the BOGO on NY Strips. I already have a few in the freezer. I put lots of veggies and fresh herbs as well as whole grains in the loaves so they should be pretty good. I will freeze two of them for future use. |

Let's continue our chat over here http://cubits.org/MidAtlanticMusings/thread/view/60666/ It happens in a flash, but the memory of it last forever. It can not be borrowed or stolen, and it is of no earthly good until it is given away. So if in your hurry you meet someone who is too weary to smile, leave him one of yours, for no one needs a smile quite as much as he who has none to give... |
