Me three!! They had no farina at Aldi today and I forgot to look for it in the market. I only had a sample pack of it. I do like having carbs in the morning for some reason.

You guys got me in the mood... I had to make cornbread this evening. The husband made ham and collards for his lunches at work this week, and I made a big pot of veggie soup, so we'll both have some cornbread accompaniment. Yum!

Gosh Bit, It must be a lot of cooking for you if your husband is not a vegetarian too. Do you ever cook meat for him, or does he do it?

He cooks all the meat himself. I'm not afraid to do it (I usually make the Thanksgiving turkey at my mom's place), but I am not usually motivated to put the effort into something I won't eat. He eats vegetarian 95% of the time, but once in a while he wants to indulge. He's a good cook, the biggest problem is us getting in each other's way when we both cook in our tiny kitchen.

My other project today was making a big batch of cookie dough, rolling it all into cookie-sized balls, and freezing it. That way, I can make one or two cookies at a time in the toaster oven when I need something sweet.

A few weeks ago, my husband bought me one of those packs of pre-scored cookie dough at the store, you just pull a piece off and make a cookie. The convenience was great, but it's something like $4 for a dozen cookies... the ingredients for this cost very little, and I got 6 dozen, which should last me months. I hope they come out of the freezer and cook up nicely.

Yes, they are very expensive for the convenience. I like baking 3 or 4 at a time for the two of us too. Aldi sells some the most delicious ones of store bought dough that I've ever tasted for $1.99 which beats heck out of the supermarket ones.

All of my cookie recipes make about 5 dozen cookies. It would take a long time to use up that dough at 4 at a time. There are also a lot of bar cookies that I like making too. Some people make cookies and then freeze the cookies. I have never tried that.

What kind of cookies did you make Bit?

Hmm... I think I should call them "everything" cookies... kinda like everything bagels.

I started with a recipe for peanut butter oatmeal cookies. It said you could optionally stir in a cup of chocolate chips or chopped peanuts, but I only had about half a cup of mini-chips and no peanuts on hand, so I put in the chips along with about a cup (got carried away chopping Whistling ) of pecans. So I guess they're peanut butter oatmeal chocolate mini chip pecan cookies Hilarious!

I finally found a recipe for a relatively low fat casserole. The sauce is made of butter, flour, milk, sour cream and chicken broth. The topping is bread crumbs mixed with Parmesean. If I am careful with the butter and use low fat milk and sour cream, it's really not bad at all and I am sure will be quite tasty. Thumbs up

That casserole still sounds very rich, I'm sure it'll come out great.

I chose the cookie recipe because of the peanut butter and oats (actually has more oats than flour), so I'm getting at least a bit of something healthy. Of course, there's plenty of butter and sugar as well... can't make a cookie too good for me Hilarious!

mm love the cookie chat. There are some awesome cookies out there.

Frozen waffles are another convenience thing you can make yourself for pennies.

And pie crust. but Aldi brings the price down there too.

Cookie dough though sounds like the nicest homemade convenience item here.

Frozen waffles are something I never understood people buying. Waffles are so easy to make, especially if you get the just-add-water mix, and they keep well in the fridge or freezer for reheating. I never freeze mine because my freezer is jam-packed full most of the time, and waffles are pretty bulky.

I had bought one of those wonderful old waffle makers from the 40's at a flea market and loved making waffles in them. I had a very old Settlement cookbook that had about 6 different waffle recipes in it.

I used to make up a batch and freeze them and just pop them in the toaster when I wanted one. Some of them were so tasty, I didn't even top them with anything and could actually take it along in the car with me to eat like a power bar.

I have experimented with making healthier whole grained ones, but it's tricky getting the ingredients right so they won't stick. I've done it with cookies too. Some of the problems I've had with them is getting the cookies to stick together if there are too many oats and grains in them. Once I ended up with a very tasty bag of cookie crumbs. Blinking

Bit, That casserole is still somewhat rich, but is only about a quarter of the fat content of the cheddar laden ones and I do like to have something of that nature from time to time, the same with creamed soups. There is an aspect of comfort food about them. Now if only there was a way to master a truly low fat great textured chicken pot pie... I have tried the phyllo ones, they don't cut it for me, although I love Spanokopita.

Yes, I meant rich more in terms of taste than actual fat content... not a bad thing Smiling

I'd think about freezing waffles if I had more freezer space... might be looking to get a chest freezer this winter anyway, but for now, mine is packed to the gills. It was like a game of tetris getting the cookie dough in it last night - sandwiched between bags of eggplant and hot peppers.

If anybody wants a meat free meal that is still filling, this veggie Shepherds Pie sounds pretty good. I'm not so sure if I would use Italian seasonings in it though. I might try something different like Tarragon, peppercorns and add a bit of dry mustard in the potatoes.It sure is easy enough to make.

Tertris- there's another game I've worked hard on.

I lvoe hciken pit pie. I guess i wouldn't miss the bottom crust too much, gets soggy, but the top crust is so yumy.

Tonight was Aldi boneless ham, garlic-chive mashed potatos, cauliflower with cheddar cheese sauce, and canned pineapple. Sort of monochromatic but everybody ate well. I had to use the cauliflower.

Frozen pancakes- even easier. People would starve without toaster ovens, anymore.

Veggie shepherds pies and pot pies are some of my favorites. Maybe that'll be on the cooking list for next weekend... though it'd need to have some greens in it with all my garden is producing now.
