Stormy, sometimes I use the already packaged creme fraiche or, if I have enough time, I make my own from ingredients that I have in my frig.

Tammy, my husband does not like salmon ordinarily, but he'll eat it done this way or broiled and topped with ginger, brown sugar, honey, orange zest and orange juice. It makes a nice brown sticky crust and the flavors permeate the entire filet.
