That sounds yummie Sally.  My favorite omelettes are usually a healthy mushroom spinach combo or the deadly but irresistable cheese, onion bacon combo.  In Paris there are bistros where you order your omelette by the type of mushroom you want in it. They post the selections daily. Varieties are never mixed in one omelette. They are served with a salad of leafy greens with no other veggies in a light vinagrette and a crusty baguette. Oh sweet heaven! |
