From Terri Baked Apple French Toast Ingredients: 1 loaf french bread 8 eggs 3 cups milk 3/4 cup sugar 1 tablespoon vanilla extract 4 granny smith apples 2 teaspoons cinnamon 2 tablespoons butter Directions: Preheat oven to 400 degrees. Spray 9" x 13" baking dish with non-stick cooking spray. Cut bread into 1 1/2" slices, then arrange closely in a single layer in baking dish. Beat eggs, then beat in milk, 1/4 cup sugar, and vanilla. Pour half of egg mixture over bread. Peel, core, and slice apples, then arrange rings evenly over bread. Pour remaining egg mixture over apples. Mix remaining 1/2 cup sugar with cinnamon, then sprinkle evenly over apples, and dot with butter. Bake 35 minutes. Cool 5-10 minutes, then cut into squares and serve with maple syrup. From Terri Sausage, Egg, and Cheese Breakfast Casserole Muffins Ingredients: 8 ounces bulk sausage 8 eggs 1 cup milk 1 teaspoon salt 1/2 teaspoon black pepper 1/4 teaspoon dry mustard 1/4 teaspoon paprika 6 english muffins, coarsely chopped 1 cup cheddar cheese, shredded 1/4 cup green onions, diced Directions: Preheat oven to 350 degrees. Lightly coat a 12 cavity muffin tin with non-stick cooking spray, set aside. Cook the breakfast sausage in a skillet over medium heat, breaking it up and crumbling it until it’s no longer pink. Set aside. In a large bowl whisk together the eggs, milk, salt, pepper, dry mustard and paprika. Add the coarsely chopped english muffins, cheese, green onions, and cooked sausage to the bowl, stir to combine. Let mixture sit for 10 minutes before filling up the muffin cups evenly. Bake for 20 to 25 minutes or until the eggs are set and cooked through. Run a knife around breakfast cups to remove from the muffin tin. From Arlene APPLE WALNUT PANCAKES 2 cups flour 1 t. baking soda 1 t. salt 2T sugar 2 eggs, beaten 2 C. buttermilk 2 T. oil 1 1/2 c. finely chopped apple (I grated it) 1/2 c. chopped walnuts (I used a bit more, we like nuts) Mix together dry ingredients. Beat eggs, add buttermilk and oil. Blend with dry ingredients. Stir in apple and nuts. Bake on hot griddle. |
