(Source: Tupperware)

6 medium carrots, shredded
3 large onions, chopped
3 garlic cloves, minced
1/3 c. light olive oil
6 (28 oz. cans tomatoes) (I use my juice, 5 quarts)
1 T. Sugar
1 T. Salt
1 T. dried basil, crushed
2 t. dried oregano, crushed
1/8 t. pepper
2 bay leaves

Mix all ingredients and simmer about one hour. I think this is meant to be used fresh but I hot pack into quart jars for later use
