For some harvest time is already here, for others it's still a while away. Do you can, dehydrate or freeze any of your garden bounty (even if your garden bounty comes from the store)?

Wendy, I am getting a late start on my Garden this year but I definitely do set aside and put up,my vegetables. I usually freeze everything, but I intend to RE-learn how to can. I used to be quite good at it when my Children were small. I kept a well stocked pantry of canned vegetables, but now freezing just for me for the winter is so much easier and Quicker.
I recently bartered for a small dehydrator,now I have two. A friend of mine showed me how to dehydrate tomatoes , so I am gearing up for that. Im hoping to have a rather large herb garden next year and that will keep the dehydrators busy!
On this subject, Do You or anyone else here know just how I should go about collecting and drying Blackberry leaves for tea?

Wow, those berries look yummy!

I've been picking some wild blackberries and I have a domestic plant in the yard but it's small still, I managed to get 2 berries before the birds got them yesterday, lol. I also have some wild dewberries back there.

My understanding for blackberry leaf tea is to use the newer bright green leaves. Then just dry and crumble.

I have a dehydrator but I usually dry my herbs the old pagan way....in the microwave Whistling

I clean and destem the herbs, then place on a couple layers of paper towel. I usually do the first run through on high for 1 min. Open door and fluff the herbs around and then nuke again at 30 sec intervals until crispy, fluffing in between each interval.

Watch them carefully though you don't want them to burn.

Hmmm, well I have plenty of Blackberry leaves, I am going to give it a go!
I use the tea for upset stomach, which I seem to get a lot during hot weather! Fresh Blackberry juice makes a wonderful Tea for Colicky babies too.

I went all out on a big Excalibur dehydrator (okay, scratch and dent, lol) but I dry a lot of fruit off of my pear and apple trees. Sometime it even makes it to winter.

On an herb forum someone mentioned not using the dehydrator for herbs because they all turn brown. I'm guessing that it's just aesthetics, not flavor or anything...??

Does anyone have suggestions of ways to preserve cabbage? Mine are all ready to be picked at the same time *sigh*.

You can dehydrate it.

Do you like sauerkraut? It's easy to make and lasts forever in the fridge or it can be canned too. There's also a relish made with cabbage, chow chow I think.

I'm not fond of sauerkraut, but my family is, so perhaps I could put some up.

I've heard of people drying leaf- foods like that; lettuce, etc. - it just seemed a little odd. WOnder what the texture would be like reconstituted.

Things like dried spinach and cabbage can be used in soups where they rehydrate nicely. I'm baffled by dried lettuce though, lol

On the cabbage I make sauerkraut it is delishious I had some with brats last night I can everything. Including the kraut. Right now I am useing my kraut crock to make fermented pickles. I also made and canned 4 jars of bread and butter pickles yesterday and about 10 jars of dill pickles a week ago. If I can quit sharing so many tomatos with the squirrels I will make canned stewed tomatos. There is no canned tomatos on the shelf in the stores that have that kind of flavor.If you like cooked cabbage you can cook it and can it I have never done that myself but I don't see why you couldn't. We ususally dehydrate peppers and onions together for soups and stews. The flavor seems to be brighter in a reconstituted pepper to me. With blackberries we just freeze them in a bowl over night then put them in a large ziplock the next day. Then when you need some you can take however many you need out of the bag because they are not stuck together.I never knew about the leaves for tea very intresting. Although I no longer have tummy troubles because of the probiotics in the kraut. Fermented foods are very good for you. If anyone is intrested I will look up and put links here on kraut making.Today I am going to make some hot pepper sauce I have never done this before but it can't be rocket science Sticking tongue out ...Ron

Ron, do you have to have a crock to make sauerkraut? I'd love to do it if it doesn't create a whole other set of things I have to buy and store!

I've made kraut in a gallon glass jar, which is similar to the crock method and I've made it in quart mason jars. I think the mason jar method is easier, especially if you just want to do a small experiment.

This is the big jar I used, I got it at Big Lots. There are freezer bags filled with brine sitting on top of the cabbage to hold it down.

Yes that is what I make it in also I ordered a jar from a web sight the raw diet here is an instructional pdf file on it.http://www.therawdiet.com/pdf/KrautInstructions.pdf

It was only about $25 including shipping and handleing Or you can do as woodwife did and get a large jar at a box store the only difference is the jar I ordered came with a bubbler and another small lid to hold down your kraut. I am making pickles in it right now. But as soon as its done I'm making more kraut. I just had what was left from last nights dinner that I didn't cook right out of the jar for lunch. If you add a small head of red cabbage it turns a nice pink color.I just tried out my Bread and butter pickles I made yesterday and they are great. I am not a big sugar fan but these were good.
Understand I am retired as of Sept. of last year and I love to garden and I love doing things that people just don't do anymore like canning and pickleing its just fun. I also make my own jerky and dried veggies. ....Friend Ron

Well, my DH has been known to eat a jar of pickles in 2 days .... it might be quite a savings. Then again, who can grow that many cucumbers, lol?

I only have about 5 cucumber plants and I am picking about 6 or 7 cukes a day I have allmost enough in the frige for another batch of dills that makes about 9 or 10 jars depending on weather I slice them or spear them or leave them whole It takes me a couple of hours to do that many but worth the time and I eat pickles like your hubby. Rolling on the floor laughing

Sure I have two old pieces of fencing that I set up like a teepee every year for the cukes to climb up it makes them easyer to pick but I still miss one every once in a while and find a cuke that looks like a watermelon. I also have a couple of plants just growing on the ground that works too.cukes grow pretty fast I say go for it.....Ron
