This is my favorite caramel recipe. I hope you enjoy!

*2 cups light corn syrup
*One 14 oz. can sweetened condensed milk
*1 1/2 cups milk
*1 cup whipping cream
*1 cup real butter, unsalted
*4 cups sugar
*2 tsp vanilla

optional:
*2 cups nuts
*tempered dipping chocolate

Directions:
Butter a 9 x 13 pan, set aside. In a heavy 6 quart dutch oven, combine corn syrup, condensed milk, cream, butter and sugar. Place over medium heat and stir occassionally
with a wooden spoon, until the mixture comes to a boil. if sugar crystals are present on the sides of the pot, wash down with a very wet pastry brush. This is an important step! If you ignore them, your caramel will crystallize.
Clip a candy thermometer onto pot side. Cook, stirring occassionally, until mixture reaches 240 degrees, or what is called the soft ball stage. Remove from heat. Stir in vanilla (and add nuts if doing so) Pour without scraping into the prepared pan. Allow to stand at room temperature overnight. Cut into 1 inch squares. Wrap in waxed paper or dip in tempered chocolate. Makes about 117 pieces of caramel. Sticking tongue out
