Cajun Dirty Rice
Thumb of 2010-10-30/Lynxx/4c08ff
2 tsp. ground Cayenne
1 1/2 tsp Sea Salt
1 1/2 tsp Black Pepper
1 1/4 tsp Sweet Paprika
1 tsp Dry Mustard
1 tsp Ground Cumin
1/2 tsp Dried Thyme leaves
1/2 tsp Dried Oregano leaves
2 Bay leaves
1/4 cup Dried Chopped Onions
Dash of Dried celery Leaves
1 large Clove of Garlic, mashed and minced
1/2 cup Green Bell Pepper, chopped fine
2 tbsp Canola oil
1 lb. Jimmy Dean Sage flavored Breakfast Sausage, crumbled
2 cups Chicken Stock
2 tbsp Butter
3/4 cup raw White Rice

Place the first 8 ingredients in a small bowl and stir to combine well. Place the canola oil,
sausage and bay leaves in a large skillet over high heat, cook , stirring upon occasion; until meat is completely cooked, about 6 to 8 minutes. Stir in the seasoning mix, then add all other ingredients except the Butter, Rice and Chicken Stock. Stir them well scraping the bottom of the pan to remove the bits. Now add the butter, stir until melted. reduce the heat to medium and cook about 8 minutes, stirring every now and then and scraping pan bottom.
Add the Stock and stir until any bits that were sticking to the pan bottom are loosened.
Cook another 5 minutes, stirring once. Now ass the rice and turn the heat to low. Cover. Cook 10 minutes, remove the bay leaves. Then turn off the burner and allow the rice to absorb the remaining Stock. Let stand on burner about 1/2 an hour before reheating to serve.
