This is an easy and healthy casserole.

Chicken & Broccoli Casserole
Thumb of 2010-11-14/Lynxx/72b07c

1 1/2 lbs. large cubed Chicken breast
1 bunch fresh Broccoli (or 1 1/2 lbs frozen)
1/2 can cream of Chicken soup
1/4 cup Mayonnaise
1/2 tsp Lemon Juice
1/4 cup Breadcrumbs, crushed finely
1 tbsp melted Butter
1/4 cup shredded or grated Parmesan cheese
Canola oil

Place chicken in a skillet with a dash of canola oil. Brown slightly. Trim the broccoli and remove stalks. Cut the florets into small pieces. Wash and place in pan. add a dash of water Cover tightly and steam for about 5 minutes with the chicken.
Combine the soup, mayonnaise and lemon juice in a casserole dish.Put the chicken and broccoli mixture into the pan and stir all together. Sprinkle the melted butter, breadcrumbs
and cheese over the top. Bake at 350 degrees for 25 to 30 minutes, or until top is golden brown.

I am just eager to know some healthy and easy recipes for my kids. This Chicken & Broccoli Casserole would be healthy for my kids.
