I love Chicken A La King anytime of the day, but because you can spoon out just a bit over toast, I especially like it for lunch. Chicken A La King ![]() 3 small chicken breasts, cut into small cubes 1/2 cup of mushrooms from a jar, diced 1/4 cup chopped green pepper 1/4 cup frozen baby peas 1 tbsp chopped celery 1 tbsp minced onion 2 tbsp pimento, diced 1 to 1 and 1/2 tbsp cornstarch 1 cup milk dash paprika canola oil Saute the chicken in a hot skillet with canola oil. Remove chicken and place in bowl. In same skillet, add a bit more canola oil and saute all the vegetables (except the pimentos) Cover 1 minute. In a 1 cup measure, place about 1/2 cup of the milk and add the cornstarch. Stir well. Now add all of the milk (including cornstarch milk) to the skillet and stir well. Add the chicken back to the skillet. Add the pimentos. Cook until it bubbles. Salt and pepper to taste. This stuff is great over pan toasted homemade bread! . |
