This spicy sweet salsa is the perfect addition to black or red Mexican beans, or Mexican rice dishes. It tastes better if you make it in the morning and use with dinner. It is properly pronounced 'PiKo dee Guy Yo'

Pico de Gallo


2 cups (1 lb) fresh tomatoes, cut into very small cubes (but not to the size of diced)
1/2 cup white onion, diced
2 tbsp chopped cilantro
1 1/2 tbsp chopped, de-seeded jalapeno
2 tsp freshly squeezed lime juice
1/2 tsp fine salt

Combine all ingredients together. Place cover over and chill in refrigerator before serving.
serve it chilled on top of Mexican hot foods.
