This is another Mexican dish, but I placed it in the appetizer section. These are also compliments of Chevy's. Delicious!

Wings O' Fire

Ingredients:

1/2 cup olive oil
1 cup Fuego spice mix
5 lbs. Chicken wing drumsticks
1 1/2 cups Blazin BBQ sauce
6 sprigs cilantro
2 1/2 cups El Rancho dressing

To make the Wings:Preheat the oven to 350 degrees. Mix the oil and spice mix in a large mixing bowl. Add the chicken wings and toss until each piece until completely coated. Place the wings in a large baking pan and bake for 30 minutes. Transfewr from pan to large tupperware. Cover and place in refrigerator until grill is ready.

To grill the Wings: Use either charcoal or propane. Heat the grill. When it's hot, place all of the wings on the grill. Turn every 2 minutes (about once each side) until heated through, about 4 minutes. Now transfer the wings to a large bowl. Pour the Blazing BBQ sauce over them uand stir to coat. Place on a serving platter with cilantro sprigs and serve alongside the El Rancho dressing.
