Chevy's/Rio Bravo's Red Rice recipe
Thumb of 2010-11-11/Lynxx/795bc2

6 beefsteak or 8 plum tomatoes
1 tbsp chopped cilantro
2 cups water
1 tsp chopped garlic
2 tsp Chipotle puree
2 tsp salt
1/3 cup canola oil
2 cups long grain white rice
1/2 cup chopped yellow onion

In a heavy skillet over high heat, place the tomatoes and char until their skins split and they become aromatic. Transfer them to a food processor of blender and puree. Stir in the cilantro. Set aside.
In a large saucepan combine the water, pureed tomatoes garlic and salt. Bring to a boil.
Heat the oil in a large skillet over high heat. Get it so hot that it is just about ready to smoke.
Add the rice and onion and saute until 3/4 of the rice is bright white to slightly brown, about 7 to 10 minutes. (Do not drain the oil) Add the tomato mixture from the other saucepan, and simmer for 15 minutes. remove the rice from the heat, cover and let stand for 20 to 30 minutes, stirring every 10 minutes. When the rice is cooked through, fluff with fork and keep warm until ready to serve. Great topped with pico de gallo. chipotle puree pico de gallo
