Cake flour is easy to make. I keep a large square tupperware of it in my pantry. it's much cheaper to make yourself, rather than buying it.

*7 cups flour
*1 cup cornstarch

This is best done by placing the flour in a large bowl and creating a little "well' with your hands in the center. Pour the cornstarch into it. Then with wire whisk, blend together well. Place a bowl the same size next to it (Or a large tupperware like I described) and begin sifting the mixture through and into new container. When finished sifting, seal container with airtight lid.
Be sure to label the container right away, so you don't get it mixed up with other flour types.
