|Sweet and Sour Meatballs
1 lb hot pork sausage
1 lb mild pork sausage
1 1/4 cup ketchup
1/4 cup pineapple juice (saved from the can you will be using)
1/4 cup firmly packed brown sugar
1 tbsp soy sauce
1 tbsp lemon juice
*1 can (15 1/4 oz) pineapple chunks, (drained & used above)
Combine the hot and mild pork, mixing well. Shape into 1 1/2 inch meatballs. Cook in a large skillet over medium heat until browned. Drain.
Combine the remaining ingredients except pineapple chunks; mix well, and pour over meatballs.
Simmer for 10 minutes, stirring occasionally. Add the pineapple and simmer an additional
10 minutes, stirring often. Makes about 2 1/2 to 3 dozen.
