Blue Cheese Olive Ball
Thumb of 2010-10-31/Lynxx/957b9b

1 (8oz) pkg. cream cheese
3 tbsp unsalted butter
1 tbsp brandy
1 (4oz) pkg blue cheese, crumbled
1 tbsp chopped chives
1/2 cup finely chopped black olives
1 cup chopped pecans
whole black olives
fresh parsley sprig

Combine the first 3 ingredients, beat at medium speed in electric mixer until smooth. Add the blue cheese, and beat well. Stir in by hand the chopped olives. Mixture will be soft.
Take out of bowl and shape into a ball. Roll in pecans. Refrigerate overnight before serving. Garnish with whole black olives and parsley sprig.
