Drunken shoulder roast (beef)


3 1/2 to 4 lb. boneless shoulder roast
1 cup burgundy wine
2 to 3 cups water
1 pkg. generic brand beef and onion soup mix
1/4 cup golden raisins
1/4 cup craisins
1 large garlic clove, mashed and diced
2 large carrots, peeled and thickly julienned
2 large russet potatoes, peeled and cut in half, then into thick cubes
2 stalks celery, chopped
1 large yellow onion, cubed
fresh parsley 1/2 cup, chopped or 1 tbsp dried

Throw the first 7 ingredients into a large crock pot. You will be adding just enough water to cover roast. Cook for 4 hours. Add veggies. removing some liquid and setting aside if need be. Cook another 2 to 3 hours, or until vegetables are soft. You can thicken the sauce if you like, by adding 1 or 2 tbsp. of cornstarch to some of the cooled set-aside sauce, then stir into the crok pot with the hot liquid.
