Ham Spread
Thumb of 2010-11-11/Lynxx/75d063

1 tbsp plus 1 tsp unflavored gelatin
1/4 chicken stock
3 tbsp butter or margarine
1 tbsp all purpose flour
1 cup half and half
2 1/2 cups cooked ham, ground fine (food processor)
*1/4 cup mayonnaise
2 tsp dijon mustard
1/2 cup whipping cream, whipped

Soften gelatin in chicken stock and set aside. Melt butter in heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add the half and half; cook over medium heat; until bubble and smooth. Remove from heat, add softened gelatin and stir well. Cool.
Combine ham, mayonnaise, and mustard. Add to cooled cream mixture and stir well. Chill until slightly thickened. Fold in whipped cream and spoon into a 1 quart mold lightly oiled with mayonnaise. (I use a square sandwich slice sized mold) Refrigerate overnight. Unmold onto portable cake cover plate. Slice as needed for sandwiches, and cover with the cake cover and return to refrigerator until eaten. Keeps 1 week.
