|My husband hates store bought macaroni and cheese, even if it's from the deli! This is the only mac and cheese dish he'll eat, and thankfully, it's mine. The secret is the cream cheese, which allows the cheddar to meld, instead of curdle up and string. Try this next time you're making macaroni and cheese, and I'm sure you'll be hooked too!
Lynxx's Wow your socks off Macaroni and Cheese
8 ozs. elbows or shells macaroni
4 tbsp. cream cheese
1 cup shredded sharp cheddar
2 tbsp dry generic coffee creamer
Cook the macaroni according to the package directions. (If your'e going to make a baked macaroni, cook just under time) Drain, reserving about 1 cup of the water. Return to pot and heated burner. Return 1/2 cup of the pasta water to the pot, and stir in the coffee creamer until it dissolves. Now add both the cream cheese and the cheddar. Stir until they melt together into the noodles. It should become smooth and creamy. If you want it more creamy, add more pasta water.
It can be eaten right now, or placed into a casserole dish and baked for 35-40 minutes at 350 degrees.
In the case of baking, I use the entire 1 cup pasta water, and top it with some extra grated cheddar.
