To make a perfectly fluffy omelette every time, you only need to take a few extra moments.
Below is how I make a 3 egg omelette .
First, separate the whites from the yolks, and place each in individual bowls. Whip the egg whites with a whisk, incorporating as much as air as you can. This takes about 1 to 2 minutes.
When the whites are light and fluffy, set them down. Now slightly beat the yolks, and then stir together gently into the whites,.
Heat a good pan to medium-high. You can add a few drops of canola oil to the pan if you want, or spray Pam cooking spray.
Making sure your pan's bottom is nice and hot, gently pour them into the pan.
It should quickly begin to rise up and fluff, proof that you whipped them correctly. Flip in about 1 to 1 1/2 minutes, depending upon how hot your burners are. Repeat. don't let the omelette brown. (unless that's the way you like them) Serve immediately.
**Tip** I have a small nonstick frying pan (or crepe pan) that I only use for this purpose. My eggs never stick, sliding out perfectly onto an awaiting plate :)
