I keep a bottle of this in my refrigerator. Great marinade, Spicy Island flavor. :) JAMAICAN JERK SAUCE ![]() Ingredients: 1 LG CLOVE GARLIC, CRUSHED 1 TBSP FRESHLY GROUND GINGERROOT 1 WHITE ONION, SMALL 3 SCALLIONS 1 TSP FRESH PARSLEY 1 LG PINCH CRUSED CLOVES 1 LG PINCH GROUND ALLSPICE 1 PINCH NUTMEG 1 TBSP BROWN SUGAR 1 TO 1 1/2 TBSP FRESH SCOTCH BONNET PEPPER 2 TBSP RED WINE VINEGAR CANOLA OIL (TRADITIONAL IS PEANUT) JUICE OF ONE LIME Place all except last 3 into a food processor and puree. Add the vinegar, oil and lime juice, blending into a paste. Scrape it into a large shallow tupperware and place your choice of chicken cuts or pork butt/shoulder. Marinate 1 day before using. Remember to turn the tupperware over now and then to fully marinate both sides. Grilling, or lightly frying in very hot, oiled cast iron skillet will give you that real island taste. |
