CROCK POT RECIPES forum: Chicken Noodle Soup, easy squizee style

1 Rotisserie/Roasted Chicken
1 cup thinly sliced celery (you can use a mandoline slicer (http://www.amazon.com/Oxo-Good-Grips-Mandoline-Slicer/dp/B00...) to slice it yourself in about 20 seconds, about 2 individual stalks)
2 cups chopped/sliced carrots, about 3 decent sized carrots (or more or less)
1/2 bag egg noodles
6 cans chicken broth (I just use the Walmart brand)
1/4 cup finely diced yellow onion
Sage, Black Pepper, Turkey Seasons as desired.

The night before, buy a rotisserie chicken from the grocery store (or make a roasted chicken). Let it cool and shred all the meat, both white & dark. Put in ceramic crock (I prefer the round crock pot for this one), add celery & carrots. Cover & sit in fridge overnight. In the morning, pop into the crock cooking element, add 4 of the cans of broth, the onion, and the seasonings. Cook on LOW for 7-8 hours. When you come home from work, boil up the egg noodles. Add the last 2 cans to the soup and let cook for at least 1/2 hour more. 20 minutes before serving, add the noodles. Serve with peanut butter saltine cracker sandwiches and orange juice. YUM!

WORD OF ADVICE: Do not cook noodles in the soup. They turn to mush and is gross.

Does this freeze well? I'w with you on the noodles, I hate mushy noodles. I guess if the rest did freeze in portions, you could always make the noodles to order? There's only 3 of us, I couldn't eat all of this at once, but it sounds delicious! TY again toni, for helping me fill in some recipes for all of us to try! you are so kind ;)

Oh absolutely does it freeze so nicely. My DH isn't a big soup person, but I totally am, so I make this gargantuan amount, then use those ZipLoc "ToGo" containers, which is a good-sized portion to make individual "soupbowls" for me at work. :) And I can't see why you can't make the noodles to order.. even at work all you'd need is a container w/a lid, baggie of noodles, some water, & a microwave. Boil the water (about 3-5 minutes) in the nuker, put in the noodles, cook again for another 3-4 minutes, let sit for at least 2 minutes, drain the water. Tada!
