2 boneless skinless chicken breasts, cut into 1inch cubes 4 tbsps margarine (I prefer "I Can't Believe It's Not Butter") 2 tbsps lemon pepper powder 2 cups rice 3 cups water In a rice cooker, put 2 cups rice & 3 cups water. Start it up, let run for 20-25 minutes. In an electric skillet, place chicken, margarine, & lemon pepper & cook until done (about 10-12 minutes). Add more margarine if you want more sauce. Serve chicken over rice, spoon margarine sauce over rice. Total cook time, about 20-25 minutes. You can add fresh snow peas, corn kernals, etc to mix for a veggie twist. Never be afraid of a scar. It just means that you were stronger than something that tried to hurt you. I always do a lemon pepper chicken in the rotisserie.. I'll post that in a separate post. Never be afraid of a scar. It just means that you were stronger than something that tried to hurt you.
