![]() 1 decent sized zucchini sliced 1 decent sized yellow squash sliced 1 decent sized Mexican squash sliced 1 lb white mushrooms, quartered 1 red bell pepper, sliced 1 yellow bell pepper, sliced 1 orange bell pepper, sliced (1 small yellow onion, slivered, optional) 1 tbsp minced/chopped garlic 2 tbsp olive oil Worchestershire sauce to taste (optional, but not really) fine ground black pepper (to taste) (optional) (1 can diced tomatoes, optional) In an electric skillet, add olive oil, bell peppers, & yellow squash. Cook on medium for about 5 minutes. Add Mexican squash & zucchini, cook for about 5 minutes, stiring constantly. Add mushrooms (and onion) last, stirring constantly. Add pepper & garlic. Lower heat to extreme low ("Warm" setting on an electric skillet, or less than 200deg), add Worchestershire sauce, and cover. Let steam for at least 4 minutes, stir, recover. Cook until mushrooms turn wilty & kinda brownish. Serve. Great with beef steaks off the grill, baked chicken, or pork shoulder steaks fresh off the grill. Never be afraid of a scar. It just means that you were stronger than something that tried to hurt you.
