I named this after the state my friend lives in, who shared with me this delicious recipe. Massachusetts Style Chicken Salad ![]() Ingredients: 2 chicken breasts, skinless, boneless and either pan fried, baked or grilled, then cut into cubes. 1 large garlic clove, minced 1/3 cup diced celery dash garlic salt 1 Tbsp. Soy Sauce 1/2 cup diced pineapple Juice of 1 slice lemon 1/3 to 1/2 cup Mayonnaise, depending upon your taste 1 Tbsp. fresh Tarragon 1/3 cup coarsely chopped English Walnuts Mix all well. Tastes even better if left to marry flavors overnight. In a pinch; Substitutions: Can use fresh diced fennel tops and smaller stalks, diced & leaves in place of tarragon-but believe me, the tarragon really makes this salad! If you can get it, do it! :) Chopped onion in place of garlic Onion salt instead of garlic salt Sunflower seeds instead of walnuts Note: Charcoal Grilled chicken DOES change the flavor away from the original, but I like both. Personally Prefer pan fried chicken to all other tastes, but you experiment :) |
